Filipino Beef Omelette

Your family will be super excited to wake up to these delicious Filipino breakfasts. And since they don’t take much time to make, you can easily cook them on busy mornings.

INGREDIENTS

  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 1 medium tomato (diced)
  • 1 small red bell pepper (minced)
  • 1 small green bell pepper (minced)
  • 0.5 cup green peas
  • 1 lb ground beef
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 5 eggs (lightly beaten)
  • Oil for frying

DIRECTIONS

  1. Saute onion and garlic over medium flame until soft and fragrant. Add diced tomatoes, 2 kinds of bell peppers, and peas and stir for 5 minutes until tomatoes release their juice.
  2. Stir in ground beef and saute until it changes color. Season with salt and pepper.
  3. Transfer the ground meat mixture to a medium bowl and let cool. When it has cooled down to room temperature, crack your eggs in and mix to combine.
  4. Pour more oil into your skillet and heat it to medium-high temperatures. Then, switch to low heat. Then, pour ¼ cup of the egg-beef mixture into the skillet and flatten it into 4-inch fritters.
  5. Cook the first side for 3 minutes, then flip and cook the other side for 2 minutes. Remove it onto a paper towel-covered plate. Repeat the process for all batter.
  6. Enjoy with banana ketchup!
