Pork Embutido

INGREDIENTS

  • 1 pound ground pork
  • 2 large eggs
  • 3 boiled eggs, cut into quarters
  • 6 Vienna sausages, cut in half
  • 1 medium onion, chopped finely
  • 1 cup carrots, chopped finely
  • 0.5 cup breadcrumbs
  • 0.5 cup cheddar cheese, shredded
  • 0.25 cup raisins
  • 0.25 cup sweet relish
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper

DIRECTIONS

  1. Pour 8 cups of water into a steamer and bring to a boil.
  2. Mix all the ingredients (minus the boiled eggs and sausages) in a large bowl.
  3. Divide the mixture into equal portions and scoop each part onto an aluminum wrap.
  4. Spread the mixture and use a spatula to press and flatten them.
  5. Place the boiled eggs and sausages in the middle.
  6. Roll the wrap away from you, and tighten it as you go. Seal the 2 ends by pinching them.
  7. Steam the embutido rolls over medium heat for 1 hour.
  8. Remove the rolls from the steamer and let them cool to room temperature.
  9. Refrigerate the meatloaf rolls for 2 hours or overnight.
  10. Unwrap, slice, and enjoy!
