INGREDIENTS
- 3 cups Water or rice wash
- 2 thumb size ginger sliced
- 1 medium onion quartered
- 3 medium tomato quartered
- 2 lbs fresh red snapper or any fish available
- 1/2 tsp ground pepper or to taste
- salt to taste
- 1 small red bell pepper cut into strips
- 1/4 cup calamansi or lemon juice or 1 tbsp tamarind powder
- 3 stalks green onions sliced
INSTRUCTIONS
- Bring water into a quick boil. Add ginger, onion and tomatoes. Simmer for 5 minutes or until tomatoes are tender.
- Add fish and cover pot. Simmer for additional 5 minutes or until fish is cooked. Season with pepper and salt to taste. Add bell peppers and calamansi juice. Gently stir and simmer for few minutes.
- Add green onions and cook for a minute. Remove pot from heat and serve while hot with steamed rice. Enjoy!
