Pork Adobo

INGREDIENTS

  • 1 tsp cooking oil
  • 1 lb pork belly (cut into 2-inch chunks)
  • 0.5 tsp annatto powder
  • 1.5 tbsp garlic cloves (minced)
  • 1.5 cup water
  • 2 tbsp low-sodium soy sauce
  • 3 tbsp white vinegar
  • 1 tsp peppercorns
  • 2 bay leaves
  • 1 tbsp sugar
  • Salt and pepper (to taste)

DIRECTIONS

  1. Use oil to brown your pork belly on all sides at medium-high temperatures for 5 minutes.
  2. Stir in annatto powder. When it dissolves, add garlic. Make sure the annatto mixture coats the pork chunks thoroughly.
  3. Then, add water, soy sauce, vinegar, peppercorns, bay leaves, and sugar. Let it boil for 10 minutes before stirring the mixture.
  4. Put on a lid and switch to simmering at low heat for 45 minutes. Stir occasionally. Add more water and season with salt and pepper if needed.
  5. When the sauce is thick as you desire, spoon it over a bed of rice and serve.
