INGREDIENTS
- 1 tsp cooking oil
- 1 lb pork belly (cut into 2-inch chunks)
- 0.5 tsp annatto powder
- 1.5 tbsp garlic cloves (minced)
- 1.5 cup water
- 2 tbsp low-sodium soy sauce
- 3 tbsp white vinegar
- 1 tsp peppercorns
- 2 bay leaves
- 1 tbsp sugar
- Salt and pepper (to taste)
DIRECTIONS
- Use oil to brown your pork belly on all sides at medium-high temperatures for 5 minutes.
- Stir in annatto powder. When it dissolves, add garlic. Make sure the annatto mixture coats the pork chunks thoroughly.
- Then, add water, soy sauce, vinegar, peppercorns, bay leaves, and sugar. Let it boil for 10 minutes before stirring the mixture.
- Put on a lid and switch to simmering at low heat for 45 minutes. Stir occasionally. Add more water and season with salt and pepper if needed.
- When the sauce is thick as you desire, spoon it over a bed of rice and serve.
