Ingredients
- Soft white / brown bread slices – 6
- Salted butter (Amul butter, preferred) – 2 – 3 tbsp or as required, softened
- Green chutney (recipe below)
- Cucumber – 1 small, peeled and cut into thin slices
For the green chutney
- Cilantro – 1 cup
- Mint leaves – 1/4 cup
- Lemon juice – 2 tsp
- Green chilly – 2 small
- Cumin powder – 1 pinch
- Sugar – 1 pinch or to taste
- Garlic – 1 clove, chopped
- Grated coconut or cashew powder – 2 tsp (optional)
- Salt – To taste
Method
1. Grind the ingredients for the chutney in the small jar of a blender.
2. Take two bread slices. Spread softened butter on one side of both the bread slices. Spread 1 – 1.5 tsp green chutney on one bread slice. Arrange 4 – 5 thin slices of cucumber. Top with the other buttered bread slice. Repeat with all the remaining bread slices. Slice into half or diagonally. Serve immediately.
