Ingredients
For palak paste
- 5 cup water
- 1 bunch palak/spinach
- 1 inch ginger
- 3 cloves garlic
- 1/4 tsp cumin seeds
OTHER INGREDIENTS:
- 3 tsp oil
- 1 tsp butter
- 3/4 cup paneer cubes /cottage cheese
- 1/2 tsp cumin seeds
- 1 inch cinnamon stick
- 1 bay leaf
- 2 tsp kasuri methi / dry fenugreek leaves
- 1 onion finely chopped
- 1 tomato finely chopped
- 1/4 tsp turmeric
- 1/2 cup water
- salt
- 1/4 tsp garam masala
- 1/2 tsp coriander powder
- 1/2 tsp red chilli powder
- 2 tbsp cream
Instructions
- Take 5 cups water in big bowl and boil
- add spinach to boiling water, and boil for 2 mins
- remove the blanched spinach into ice water
- cool completely for 2 – 3 mins
- Take blanched palak, 1 inch ginger, 3 clove garlic and cumin seeds
- blend to smooth paste without adding any water. keep aside.
- now in a large kadai heat 3 tsp oil, 1 tsp butter and roast the spices till it turns aromatic.
- add 1 onion and saute till it turns golden brown
- add 1 tomato and saute till the tomatoes turn soft and mushy.
- add prepared palak paste, 1/2 cup water, 1/4 tsp turmeric ,1/2 tsp red chilli powder,1/2 tsp coriander powder, 1/4 tsp garam masala and ¾ tsp salt.
- mix well adjusting consistency as required.
- add paneer and mix well.
- add 1 tsp kasuri methi ,mix well.
- simmer for 5 minutes or till paneer absorbs flavour.
- serve dhaba-style palak paneer with roti / naan.
