Ingredients
- 3 cups basmati rice soaked for 30 minutes and drained
- 1/4 cup ghee
- 15-20 cashewnuts
- A handful raisins
- 3 bay leaf
- 2 cinnamon stick
- 3-4 green cardamom
- 2 black cardamom
- 4-6 cloves
- 1 cup frozen mixed vegetables peas, carrot, beans
- 4 1/2 cup water
- Salt to taste
Instructions
- Heat ghee in a saucepan. Briefly fry the cashewnuts. Plump up the raisins. Drain and reserve.
- Into the same ghee, add the whole spices and sizzle. Add the frozen vegetables and saute for a minute.
- Add the drained rice and fry for 5-6 minutes. Add the water and salt. Keep the flame on high and allow it to come to a boil.
- Keep the flame on minimum and cook till done. Give a stir once in between.
- Serve hot with side of choice.
