Thai crispy fried banana

Ingredients

  • ½ cup coconut milk
  • 1¼ cup rice flour
  • ¼ cup dessicated coconut
  • 1 teaspoon salt
  • ¼ cup sugar
  • ½ cup water
  • 2 tablespoons sesame seeds
  • 8 lady finger bananas (or 4 large bananas halved)
  • vegetable oil, for frying

Method

  1. Place all ingredients except bananas into large bowl. Mix well to form a smooth batter.
  2. Heat oil in a wok or large pan over high heat until very hot (185°C).
  3. Dip the banana into the batter and coat thoroughly. Place in the oil a few at a time and cook for 5 minutes turning occasionally until golden brown. Remove and drain on absorbent paper.
  4. Serve drizzled with honey or maple syrup with wedges of lime and coconut ice cream.
