Slow Cooker Dong Po Rou

Ingredients

  • 1 Kilos Pork Belly
  • 3 Bunches Leeks
  • 2 Pieces Ginger thumb-sized, peeled and sliced
  • 2 Cups Chinese Cooking Wine
  • 1 Cup Soy Sauce
  • 1 Cup White Sugar

Instructions

  1. Blanch pork belly in boiling water for 2 minutes.
  2. Cut into 2 inch cubes.
  3. Truss individually with butcher’s twine.
  4. Arrange leeks and ginger at the bottom of the slow cooker.
  5. Put pork on top, fat side down.
  6. Pour in wine and soy sauce.
  7. Top pork with sugar.
  8. Cook for 6 hours on low.
  9. Flip pork fat side up, ladle cooking liquid on top, and cook for another four hours
