Easy Indian Chicken Curry

Ingredients

  • 2 lbs boneless skinless chicken breasts cut into cubes
  • 2 tbsp vegetable oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tbsp minced ginger
  • 1 1/2 tsp paprika
  • 1 1/2 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 can crushed tomatoes
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • salt and pepper to taste
  • freshly chopped cilantro for garnish

Instructions 

  1. In a large pot over medium-high heat, heat the oil. Add the onion and cook for about 5 minutes, until soft. Add the chicken and sear for about 5 minutes until no longer pink. Stir in the garlic and ginger and cook for 1 minute until fragrant.
  2. Add the spices and cook for 1 minute until very fragrant. Add the tomatoes and broth and bring to a simmer. Stir in the heavy cream, and season with salt and pepper. Simmer until the chicken is cooked through and tender, about 15 to 20 minutes.
  3. Serve over rice with naan, garnished with cilantro.
