Ingredients
- 2 lbs boneless skinless chicken breasts cut into cubes
- 2 tbsp vegetable oil
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 tbsp minced ginger
- 1 1/2 tsp paprika
- 1 1/2 tsp ground turmeric
- 1 tsp ground cumin
- 1 can crushed tomatoes
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- salt and pepper to taste
- freshly chopped cilantro for garnish
Instructions
- In a large pot over medium-high heat, heat the oil. Add the onion and cook for about 5 minutes, until soft. Add the chicken and sear for about 5 minutes until no longer pink. Stir in the garlic and ginger and cook for 1 minute until fragrant.
- Add the spices and cook for 1 minute until very fragrant. Add the tomatoes and broth and bring to a simmer. Stir in the heavy cream, and season with salt and pepper. Simmer until the chicken is cooked through and tender, about 15 to 20 minutes.
- Serve over rice with naan, garnished with cilantro.
