Ingredients
- 2 cups glutinous Thai sticky rice
- 2 cups coconut milk
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon cornstarch with 1 tablespoon of water
Instructions
- Add the rice to a large bowl and submerge with water for 4-5 hours, or overnight. If you’re short on time, soaking the rice for two hours should be okay. After soaking, drain and rinse the rice thoroughly.
- Line a steamer basket with a piece of cheesecloth and place the rice on top of it.
- Add water to the pot and bring it to a boil. Then place the steamer basket into the pot and cover the pot with a lid. Steam the rice for about 20 minutes, until it is soft but still has a bit of a bite. Remove the rice from the steamer and set aside in a bowl.
- In a small saucepan, combine the coconut milk, sugar, and salt. Heat on low for a few minutes and then pour half of the liquid into the rice and mix well.
- Place the remaining sauce back over the heat. In a small bowl, combine the cornstarch and water to make a slurry. Mix it well, ensuring there are no lumps.
- Add the slurry to the remaining milk and continue to heat on low until the sauce thickens. Serve and enjoy!
