Ground Beef Casserole with Basmati Rice

Ingredients

  • 1 pound of ground beef
  • 1 onion chopped
  • 1 green pepper chopped
  • 1/2 tsp chili powder
  • 1 tsp cumin generous
  • 1 tsp paprika generous
  • 2 to matoes chopped or 1 (14 oz) can of diced tomatoes
  • 1 cup uncooked rice
  • salt pepper to taste
  • water
  • oil
  • 2 tbsp fresh parsley

Instructions

  1. Heat a skillet on medium heat, add a little oil if needed.
  2. Brown the ground beef and then add the onion and green pepper, cook until tender.
  3. Meanwhile cook rice according to directions.
  4. Add spices and tomatoes to beef mixture and let simmer for 20-25 minutes, until the liquid has been absorbed. Adjust the spices to your taste.
  5. Preheat the oven to 425 degrees and bake until bubbly.
