CRAWFISH CAKES

INGREDIENTS

  • 1 cup saltine cracker crumbs
  • 1 tbsp dijon mustard
  • 2 tbsp light mayonnaise
  • 1 bunch green onions chopped
  • 1/3 cup fresh parsley chopped
  • 1/3 cup reduced-fat sharp Cheddar cheese shredded
  • 1 lb Louisiana crawfish tails rinsed and drained
  • salt and pepper to taste
  • 1 tbsp olive oil
  • flour
  • horseradish sauce

INSTRUCTIONS

  1. In medium bowl, carefully combine all ingredients except oil and flour.
  2. Cover and chill 30 minutes, if time permits. Shape into 8 patties.
  3. In large nonstick skillet, heat oil. Lightly dust patties with flour, and cook over medium heat for 3–5 minutes on each side, or until browned. Serve with Horseradish Sauce.
