CRAVING BEST CAJUN CRAWFISH BURGERS

INGREDIENTS

  1. 1 cup saltine cracker crumbs
  2. 1 tablespoon dijon mustard
  3. 2 tablespoons light mayonnaise
  4. 1 teaspoon hot sauce
  5. 1 bunch green onions chopped
  6. 1/3 cup chopped fresh parsley
  7. 1/3 cup shredded reduced-fat sharp cheddar cheese
  8. 1 pound crawfish tails rinsed and drained
  9. salt and pepper to taste
  10. 1 tablespoon olive oil
  11. flour
  12. horseradish sauce recipe follows

INSTRUCTIONS

  1. In a medium bowl, carefully combine all ingredients except oil and flour.

  2. Cover and chill 30 minutes, if time permits. Shape into 8 patties.

  3. In large nonstick skillet, heat oil. Lightly dust patties with flour, and cook over medium heat for 3–5 minutes on each side, or until browned.

Serve with Horseradish Sauce, if desired.
