Turkey Lettuce Wraps

These Turkey Lettuce Wraps are so easy to make and utterly addictive! Perfectly seasoned ground turkey, mix with vibrant veggies – delicious!

Ingredients

  • 2 tablespoons coconut oil
  • 1 pound ground turkey
  • 3 tablespoons coconut aminos
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons coconut sugar or 1 1g packet stevia/erythritol blend (see notes)
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon fish sauce
  • 4 large cloves garlic crushed
  • 1 tablespoon fresh-grated ginger
  • 1 head butter lettuce
  • 1/4 medium red onion thinly sliced
  • 1 small carrot julienned
  • 1 scallion green and white parts, thinly sliced
  • 2 tablespoons roasted peanuts or almonds chopped (see notes)
  • Fresh lime wedges for squeezing on top

Instructions

  1. Heat the coconut oil in a large skillet over medium-high heat. Once melted, add the turkey and cook until browned, about 6 to 8 minutes, stirring occasionally with a wooden spoon to break up the meat.
  2. Add the tamari sauce or coconut aminos, rice vinegar or apple cider vinegar, coconut sugar or stevia/erythritol blend, crushed red pepper flakes, fish sauce, garlic, and ginger and cook 2 minutes, stirring constantly.
  3. Spoon the meat mixture into lettuce leaves and top with the red onion, carrot, scallion, and peanuts or almonds. Serve along with the lime wedges for squeezing on top.
