Danggit Fried Rice

Ingredients:

  • 2 cups cooked rice
  • 2 pieces dried danggit
  • 4 pieces dried danggit (discard the head and chopped)
  • 1 tbsp chopped garlic
  • ¼ cup chopped spring onion
  • 3 tbsp cooking oil

Preparation Instructions:

  1. Heat up a non-stick skillet with 3 tbsp of cooking oil. Pan-fry 2 pieces of dried danggit until crispy and golden brown. Remove and drained on paper towel to absorb excessive oil.
  2. Use the remaining oil to saute the chopped danggit and garlic until fragrant.
  3. Add in cooked rice, constantly stirring until heated through.
  4. Add in chopped spring onion, toss well.
  5. Dish out to a serving bowl, top with 2 pieces of crispy danggit. Serve.
