INGREDIENTS
- 1 pound ground pork
- 2 large eggs
- 3 boiled eggs, cut into quarters
- 6 Vienna sausages, cut in half
- 1 medium onion, chopped finely
- 1 cup carrots, chopped finely
- 0.5 cup breadcrumbs
- 0.5 cup cheddar cheese, shredded
- 0.25 cup raisins
- 0.25 cup sweet relish
- 1 teaspoon salt
- 0.5 teaspoon ground black pepper
DIRECTIONS
- Pour 8 cups of water into a steamer and bring to a boil.
- Mix all the ingredients (minus the boiled eggs and sausages) in a large bowl.
- Divide the mixture into equal portions and scoop each part onto an aluminum wrap.
- Spread the mixture and use a spatula to press and flatten them.
- Place the boiled eggs and sausages in the middle.
- Roll the wrap away from you, and tighten it as you go. Seal the 2 ends by pinching them.
- Steam the embutido rolls over medium heat for 1 hour.
- Remove the rolls from the steamer and let them cool to room temperature.
- Refrigerate the meatloaf rolls for 2 hours or overnight.
- Unwrap, slice, and enjoy!
