Ingredients
- ½ cup coconut milk
- 1¼ cup rice flour
- ¼ cup dessicated coconut
- 1 teaspoon salt
- ¼ cup sugar
- ½ cup water
- 2 tablespoons sesame seeds
- 8 lady finger bananas (or 4 large bananas halved)
- vegetable oil, for frying
Method
- Place all ingredients except bananas into large bowl. Mix well to form a smooth batter.
- Heat oil in a wok or large pan over high heat until very hot (185°C).
- Dip the banana into the batter and coat thoroughly. Place in the oil a few at a time and cook for 5 minutes turning occasionally until golden brown. Remove and drain on absorbent paper.
- Serve drizzled with honey or maple syrup with wedges of lime and coconut ice cream.
