CHINESE OXTAIL SOUP

INGREDIENTS  

  • 500g oxtail
  • 3 tomatoes
  • 250g ketchup
  • 1 onion
  • 1 carrot
  • Olive oil
  • 1 teaspoon black pepper
  • Sugar
  • Salt
  • 1 tablespoon cooking wine
  • 2-3 bay leaves
  • 1 cinnamon stick
  • 3-5 pieces ginger
  • 3 medium cloves of garlic
  • 1 green onion

INSTRUCTIONS 

  1. Heat a wok with clear water, and add the washed oxtail, ginger and 1 tablespoon cooking wine. Cook it until boiling. Pour the soup through the filter into a bowl. Transfer the oxtail in a bowl and wash it with hot water.
  2. Preheat a wok under low heat for 3 minutes. Add the oxtail and filtered soup in the wok. Put the 2 bay leaves, 1 cinnamon stick, green onion and ginger in the wok. Continue to cook it under middle heat until boiling. Turn the fire down, and continue to cook it under low heat for 45 minutes.
  3. Peel the tomatoes and cut them into pieces. Cut the onions and carrots into pieces and slice the garlic. Heat a pan with oil, and stir-fry garlic until fragrant. Add onion and carrot and continue to cook them until becoming light yellow. Transfer them on a plate.
  4. Heat the pan with oil, and stir-fry the tomatoes and ketchup until they become thick. Pour them into the wok. Add the cooked onion and carrot. Mix them well and cook under the middle heat until boiling. Then, turn the fire down. Continue to cook it under low heat for about 30 minutes until the oxtail cooked. Sprinkle black pepper, salt and sugar on it. Serve.
