Crock Pot General Tso Chicken

Ingredients

Chicken

  • 2 lbs chicken breasts, boneless skinless
  • 1 cup cornstarch
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 2 tbsp vegetable oil

General Tso Sauce

  • 1 tbsp garlic, minced
  • 1/4 cup hoisin sauce
  • 1/4 cup soy sauce, low-sodium recommended
  • 1/4 cup rice vinegar
  • 2 tbsp honey
  • 2 tbsp water

Serving – optional

  • steamed rice
  • red pepper flakes
  • green onions / scallions, minced
  • sesame seeds

Instructions 

  1. Slice chicken breasts into bite size pieces and place in a large ziplock bag with cornstarch, salt and pepper. Shake until coated.
  2. Place a large skillet over medium-high heat. Add 1 tbsp vegetable oil and half of the chicken pieces to the pan, shaking off excess cornstarch.
  3. Fry several minutes until lightly golden, and add all the browned chicken to the slow cooker. Repeat for the remaining chicken.
  4. Add the garlic, hoisin sauce, soy sauce, rice vinegar, honey and water to the slow cooker. 
  5. Cook for 4 hours on low heat. (You may want to cook rice separately during this time.)
  6. When ready to serve, serve chicken with optional red pepper flakes, green onions and sesame seeds. Enjoy!
