Homemade Ground Chicken Sausage

Ingredients

  • 1 pound chicken breasts, boneless, skinless
  • 2 large garlic cloves, chopped
  • 1 teaspoon onion powder
  • 1 tablespoons chili powder
  • 2 tablespoons paprika
  • 1 teaspoon cayenne
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Cut chicken breasts into 1-2 inch chunks. Place in a large mixing bowl and set aside.
  2. In a small bowl combine the spices and mix until well incorporated.
  3. Sprinkle the seasoning over the chicken and toss well.
  4. Place the meat into a food processor and grind until the desired consistency has been achieved.
  5. Cover and refrigerate for 24 hours.
  6. Use ground sausage as directed in recipes or form into patties and cook until center temperature reaches 165 degrees F.
