Ingredients
- 1 kilogram Chicken (mix cut)
- 1 pack Mama Sita’s Afritada mix (30 grams)
- 1 large Onion (chopped)
- 6 cloves Garlic (minced)
- 2 medium size Potatoes (cubed)
- 2 medium Carrots (cubed)
- 1 Red bell pepper (cubed)
- 2 large Tomato (chopped)
- 1 small can Green peas
- 1 tablespoon Fish sauce
- 1 1⁄2 cup Water (add more if necessary)
- 1⁄2 teaspoon Salt
- 1⁄4 teaspoon ground Black pepper
- 3 tablespoons Cooking oil
Instructions
Preparation:
- If you buy the chicken whole, cut it into serving pieces. Set aside.
- Peel, chop, mince, and cube the vegetables and spices needed for the recipe.
Cooking:
- Heat the cooking oil in a pan over medium heat. Add potatoes and carrots and fan fry both sides until the color changes. Remove from pan and drain on paper towels.
- On the same pan, add the chicken parts and fan fry for 2 minutes on each side or until lightly browned. Remove from pan.
- On the same pan, add the onion and saute until softened, then add the garlic and saute until lightly browned and aromatic.
- Add the tomatoes, stir, and mash gently until soft.
- Add back the pan-fried chicken, season with salt and pepper, stir, and cook for 2 minutes.
- Add water, stir, and bring to a boil. Once the liquid starts boiling, add the Mama Sita’s Afritada mix. Stir, until it dissolves completely.
- Cover with a lid and simmer for 10 minutes over medium-low heat.
- Then add the pan-fried potatoes and carrots, cover again, and simmer for 5 minutes.
- Add fish sauce, cooked green peas, and bell pepper. Simmer for 3 minutes or until the sauce reaches your preferred consistency.
- Taste it and adjust it as necessary before serving. Transfer to a serving dish and serve warm with a side of steamed rice.Share and enjoy the food. Happy cooking!
