Chicken Afritada

Ingredients

  • 1 kilogram Chicken (mix cut)
  • 1 pack Mama Sita’s Afritada mix (30 grams)
  • 1 large Onion (chopped)
  • 6 cloves Garlic (minced)
  • 2 medium size Potatoes (cubed)
  • 2 medium Carrots (cubed)
  • 1 Red bell pepper (cubed)
  • 2 large Tomato (chopped)
  • 1 small can Green peas
  • 1 tablespoon Fish sauce
  • 12 cup Water (add more if necessary)
  • 12 teaspoon Salt
  • 14 teaspoon ground Black pepper
  • 3 tablespoons Cooking oil

Instructions

Preparation:

  1. If you buy the chicken whole, cut it into serving pieces. Set aside.
  2. Peel, chop, mince, and cube the vegetables and spices needed for the recipe.

Cooking:

  1. Heat the cooking oil in a pan over medium heat. Add potatoes and carrots and fan fry both sides until the color changes. Remove from pan and drain on paper towels.
  2. On the same pan, add the chicken parts and fan fry for 2 minutes on each side or until lightly browned. Remove from pan.
  3. On the same pan, add the onion and saute until softened, then add the garlic and saute until lightly browned and aromatic.
  4. Add the tomatoes, stir, and mash gently until soft.
  5. Add back the pan-fried chicken, season with salt and pepper, stir, and cook for 2 minutes.
  6. Add water, stir, and bring to a boil. Once the liquid starts boiling, add the Mama Sita’s Afritada mix. Stir, until it dissolves completely.
  7. Cover with a lid and simmer for 10 minutes over medium-low heat.
  8. Then add the pan-fried potatoes and carrots, cover again, and simmer for 5 minutes.
  9. Add fish sauce, cooked green peas, and bell pepper. Simmer for 3 minutes or until the sauce reaches your preferred consistency.
  10. Taste it and adjust it as necessary before serving. Transfer to a serving dish and serve warm with a side of steamed rice.Share and enjoy the food. Happy cooking!
