Ingredients
- 4 fillets black cod
- salt and freshly ground pepper to taste
- 2 tablespoons brown sugar
- 3 tablespoons lime juice
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- nonstick cooking spray
Instructions
- Preheat the oven to 425°F. Coat a baking dish with nonstick cooking spray. Place the fish in the prepared dish and season with salt and pepper.
- Meanwhile, bring brown sugar, lime juice, vinegar, soy sauce, and a pinch of salt to a boil in a small saucepan over medium heat. Simmer for 4 to 5 minutes, or until thick and syrupy. Spread 1 teaspoon glaze evenly over each cod filet; reserve any remaining glaze.
- Place baking dish in oven and bake for 12 minutes, or until opaque and just cooked through. Serve with reserved glaze and garnished with mint and scallions.
