New Orleans Crawfish Bread

Ingredients

  • 2 Tbsp unsalted butter
  • 1 Tbsp olive oil
  • ½ cup white onion finely diced
  • 2 stalks celery finely diced
  • 1 small green bell pepper finely diced
  • 1 small red bell pepper finely diced
  • 1 Tbsp minced garlic
  • ¼ cup white wine
  • 1 tsp Cajun seasoning
  • 16 oz. crawfish tails see note
  • 8 oz. cream cheese cut into small cubes
  • ¼ cup chopped green onions
  • 4 oz. pepperjack cheese shredded
  • 1 large loaf soft French bread halved lengthwise
  • chopped Italian parsley

Instructions

  1. Line a baking sheet with parchment paper; set aside.
  2. Using a large skillet, add butter and olive oil; place over medium-high heat.
  3. Once hot, add onion, celery and bell peppers; stir until well combined. Sauté, stirring occasionally, for 5-6 minutes, or until bell peppers have softened slightly.
  4. Add garlic; stir and continue sautéing for 1-2 minutes, stirring often.
  5. Add wine, Cajun seasoning, crawfish tails and cream cheese; stir until well combined. Continue sautéing, stirring occasionally, until cream cheese has fully melted and most of the liquid has evaporated. Remove from heat and set aside to cool.
  6. Once cooled, add green onions and pepperjack cheese; stir until well combined.
  7. Preheat oven to 350°F.
  8. Spread mixture evenly on top of two halves of French bread.
  9. Bake for 12-15 minutes, or until cheese has melted.
  10. Switch oven to broil and broil for 2-3 minutes, or until top of mixture has browned slightly.
  11. Remove from oven and top with chopped parsley.
  12. Slice and serve warm.
