Also known as beef bourguignon or boeuf bourguignon, this dish is hearty and filling. This beef bourguignon recipe is made with beef, red wine, beef broth, and lots of vegetables. Serve this beef burgundy stew with mashed potatoes, egg noodles, rice, or all on its own. It&#8217;s delicious no matter what!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>8\u00a0slices\u00a0bacon\u00a0cut into \u00bc-inch slices<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0canola oil.<\/li>\n\n\n\n<li>1 3-\u00a0pound\u00a0boneless beef chuck\u00a0fat removed and cut into 1\u00bd-inch cubes<\/li>\n\n\n\n<li>Kosher salt<\/li>\n\n\n\n<li>Freshly ground black pepper<\/li>\n\n\n\n<li>5\u00a0carrots\u00a0sliced diagonally into 1-inch chunks<\/li>\n\n\n\n<li>1\u00a0large yellow onion\u00a0<em>diced<\/em><\/li>\n\n\n\n<li>4\u00a0cloves\u00a0garlic minced; divided<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0all-purpose flour<\/li>\n\n\n\n<li>1\u00a0750 ml. bottle good red wine such as Pinot Noir or Cote du Rhone<\/li>\n\n\n\n<li>\u00bd\u00a0cup\u00a0cognac<\/li>\n\n\n\n<li>1\u00a02 cup can beef broth<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0tomato paste<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0fresh thyme leaves or \u00bd teaspoon dried)<\/li>\n\n\n\n<li>1\u00a0bay leaf<\/li>\n\n\n\n<li>4\u00a0tablespoons\u00a0unsalted butter<\/li>\n\n\n\n<li>1\u00a0pound\u00a0frozen pearl onions\u00a0<em>thawed<\/em><\/li>\n\n\n\n<li>1\u00a0pound\u00a0fresh cremini mushrooms\u00a0stems removed and caps thickly sliced<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat oven to 325\u00b0F<\/li>\n\n\n\n<li>Pat the beef dry with paper towels, season with salt &amp; pepper; set aside.<\/li>\n\n\n\n<li>In a small bowl, combine the flour, salt and pepper; set aside.<\/li>\n\n\n\n<li>Add the bacon to a Dutch oven set over medium heat. Cook until the fat has rendered and use a slotted spoon to transfer the bacon pieces to a paper towel-lined plate.<\/li>\n\n\n\n<li>Add 1-tablespoon canola oil to the pot and wait 30 seconds to allow the oil to heat. Add about 1\/3rd beef cubes to the pot, turning as needed, to sear all sides. Repeat with remaining beef searing 1\/3rd of the beef at-a-time. Transfer the beef to the same plate with the bacon.<\/li>\n\n\n\n<li>Add the carrots and chopped onions to the Dutch oven. Sprinkle with 1-teaspoon kosher salt and \u00bd teaspoon freshly ground black pepper. Cook 8-12 minutes or until the vegetables have lightly browned. Add half the minced garlic and cook another 30 seconds.<\/li>\n\n\n\n<li>Add the beef and bacon back to the pot with the vegetables and mix. Sprinkle flour over the meat\/vegetable mixture and cook, stirring often, for 5 minutes.<\/li>\n\n\n\n<li>Add the wine slowly while deglazing (scraping the flavorful bits) the pan. Add the cognac and enough beef broth to almost cover the meat.<\/li>\n\n\n\n<li>Add the tomato paste, thyme leaves and bay leaf and stir. Bring back to a simmer, cover the pot with a tight-fitting lid and place it in the oven.<\/li>\n\n\n\n<li>Cook the beef 2-3 hours, stirring occasionally, until the meat is fork-tender.<\/li>\n\n\n\n<li>While the beef cooks, prepare the onions &amp; mushrooms. Heat 2 tablespoons butter in a medium saucepan over medium-low heat. Add the thawed pearl onions and season with kosher salt and freshly ground black pepper. Cook until the onions are lightly browned on all sides, 8-10 minutes. Add the remaining 2 tablespoons butter, sliced cremini mushrooms and the remaining minced garlic to the pan. Cook until golden brown, about 6-8 minutes. Season to taste with kosher salt and freshly ground black pepper, if needed. Set aside until beef is ready.<\/li>\n\n\n\n<li>When the beef is cooked through and tender, transfer the stew from the oven to the stovetop. Remove the lid and set the burner to medium heat. Add the pearl onion\/mushroom mixture and bring the stew to a boil (stovetop). Reduce the temperature to low and simmer 15 minutes.
