It can\u2019t get any simpler and more delicious than this.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00bd\u00a0pounds\u00a0small Yukon Gold or yellow potatoes\u00a0peeled or unpeeled, quartered<\/li>\n\n\n\n<li>3\u00a0yellow onions\u00a0<em>peeled cut into large wedges<\/em><\/li>\n\n\n\n<li>4\u00a0slices\u00a0bacon\u00a0cut crosswise into \u00bd-inch pieces<\/li>\n\n\n\n<li>4\u00a0tablespoons\u00a0canola oil\u00a0divided<\/li>\n\n\n\n<li>Kosher salt<\/li>\n\n\n\n<li>Ground black pepper<\/li>\n\n\n\n<li>8\u00a06-ounce bone-in, skin-on chicken thighs<\/li>\n\n\n\n<li>1\u00a0shallot\u00a0minced<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0minced fresh rosemary<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0minced fresh thyme leaves<\/li>\n\n\n\n<li>\u00bd\u00a0cup\u00a0dried figs\u00a0stemmed &amp; diced<\/li>\n\n\n\n<li>\u00bc\u00a0cup\u00a0Madeira<\/li>\n\n\n\n<li>\u00bc\u00a0cup\u00a0dry or semi-dry white wine<\/li>\n\n\n\n<li>Garnishes: chopped fresh parsley or thyme leaves<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Recommended Equipment<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Baking Sheet<\/li>\n\n\n\n<li>Instant Read Meat Thermometer<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat oven to 450\u00b0F and adjust oven rack to lowest position.<\/li>\n\n\n\n<li>Line a large, rimmed baking sheet with aluminum foil and spray the foil with nonstick spray.<\/li>\n\n\n\n<li>Add potatoes, onions, bacon to the baking sheet and drizzle with oil. Toss ingredients to coat with thoroughly with oil, and season with salt and pepper.<\/li>\n\n\n\n<li>Set the vegetables in the oven (lowest rack) and cook 10 minutes.<\/li>\n\n\n\n<li>While the vegetables roast, heat 2 tablespoons oil in a large cast iron (if available) skillet set over medium-high heat.<\/li>\n\n\n\n<li>Pat the chicken dry with paper towels and sprinkle with salt and pepper. When the oil is hot, press the chicken (skin-side down) in the skillet. Cook until the skin is a dark golden brown, about 10 minutes. Transfer chicken, skin-side up, to a paper towel-lined plate. When all chicken has partially cooked, transfer the chicken (skin-side up) to the sheet pan with the vegetables.<\/li>\n\n\n\n<li>Roast an additional 15-30 minutes or until the internal temperature of the chicken registers 175\u00b0F-180\u00b0F on an instant-read meat thermometer.<\/li>\n\n\n\n<li>While the chicken\/vegetables finish cooking, drain all except 2 tablespoons fat from the skillet. Turn heat to medium and add minced shallot, rosemary, \u00bc teaspoon kosher salt and \u00bc teaspoon ground black pepper. Cook until shallot tender, 1-2 minutes. Add figs, Madeira and wine and cook until slightly reduced, about 3 minutes.
