Try it out for Easter, Christmas, or any special occasion.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">For the Lamb<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2\u00a0pounds\u00a0rack of lamb\u00a0frenched (bone exposed) with fat cap removed (1 rack)<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0olive oil\u00a0or grapeseed oil<\/li>\n\n\n\n<li>4\u00a0tablespoons\u00a0Dijon mustard<\/li>\n\n\n\n<li>\u00bd\u00a0cup\u00a0fresh basil leaves\u00a0packed<\/li>\n\n\n\n<li>\u00bc\u00a0cup\u00a0fresh Italian parsley\u00a0flat leaf<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0fresh thyme leaves<\/li>\n\n\n\n<li>4\u00a0cloves\u00a0garlic\u00a0<em>peeled<\/em><\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0unsalted butter\u00a0melted (\u00bc stick)<\/li>\n\n\n\n<li>1\u00bd\u00a0tablespoons\u00a0kosher salt<\/li>\n\n\n\n<li>8\u00a0ounces\u00a0Panko breadcrumbs\u00a0(do not substitute regular breadcrumbs!)<\/li>\n\n\n\n<li>\u00bd\u00a0cup\u00a0freshly grated Parmesan cheese<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the Yogurt Mint Sauce<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u25a21&nbsp;cup&nbsp;plain Greek yogurt<\/li>\n\n\n\n<li>\u25a2\u00bd&nbsp;cup&nbsp;chopped fresh mint leaves&nbsp;<em>diced<\/em><\/li>\n\n\n\n<li>\u25a22&nbsp;cloves&nbsp;garlic&nbsp;<em>minced (2 teaspoons)<\/em><\/li>\n\n\n\n<li>\u25a21&nbsp;teaspoon&nbsp;kosher salt<\/li>\n\n\n\n<li>\u25a2\u00bd&nbsp;teaspoon&nbsp;freshly ground black pepper<\/li>\n\n\n\n<li>\u25a21&nbsp;tablespoon&nbsp;freshly squeezed lemon juice&nbsp;<em>(from 1 lemon)<\/em><\/li>\n\n\n\n<li>\u25a21&nbsp;pinch&nbsp;ground cayenne pepper&nbsp;<em>optional<\/em><\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Recommended Equipment<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/amzn.to\/30oxFMJ\" target=\"_blank\" rel=\"noreferrer noopener\">Baking Sheet<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/30xFWy5\" target=\"_blank\" rel=\"noreferrer noopener\">Food Processor (click for my favorite)<\/a><\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">For the Rack of Lamb<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Remove the lamb from the fridge 1\u00bd hours before cooking to ensure it is at room temperature before placing in the oven. If the meat isn\u2019t at room temperature before cooking, it won\u2019t cook evenly.2 pounds rack of lamb<\/li>\n\n\n\n<li>Line a bakign sheet with aluminum foil and spray with nonstick cooking spray. Place the rack of lamb on the prepared baking sheet and brush all sides of the lamb with oil and Dijon mustard. Lightly season with kosher salt and freshly ground black pepper. Set aside until the basil crust\/seasoning is ready.2 tablespoons olive oil,4 tablespoons Dijon mustard<\/li>\n\n\n\n<li>In the bowl of a food processor, fitted with the steel blade, pulse the basil, parsley, thyme, garlic, butter, salt, bread crumbs and Parmesan until the ingredients are evenly processed, about 6-8 times. Season to taste, and add more salt, pepper and\/or Parmesan cheese, if needed.\u00bd cup fresh basil leaves,\u00bc cup fresh Italian parsley,1 tablespoon fresh thyme leaves,4 cloves garlic,2 tablespoons unsalted butter,1\u00bd tablespoons kosher salt,8 ounces Panko breadcrumbs,\u00bd cup freshly grated Parmesan cheese<\/li>\n\n\n\n<li>With the lamb on the sheet pan, press the basil\/parsley\/thyme mixture into both sides of the lamb meat.<\/li>\n\n\n\n<li>Preheat the oven to 450\u00b0F for 15-30 minutes before placing the lamb in the oven and set the oven rack to the middle position.<\/li>\n\n\n\n<li>Wrap the bones in aluminum foil and place the lamb with the bones curving up.<\/li>\n\n\n\n<li>Roast the lamb for 20 minutes for rare or 25 minutes for medium-rare (125\u00b0F-130\u00b0F). For complete transparency, we prefer lamb cooked to medium to medium-well (135-145\u00b0F).<\/li>\n\n\n\n<li>Remove the lamb from the oven and cover with aluminum foil.
