{"id":1493,"date":"2023-08-13T15:50:46","date_gmt":"2023-08-13T15:50:46","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=1493"},"modified":"2023-08-13T15:50:48","modified_gmt":"2023-08-13T15:50:48","slug":"instant-pot-chana-masala","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/08\/13\/instant-pot-chana-masala\/15\/50\/1493\/46\/appdev2098\/countries-dinner-ideas\/indian-dinner\/","title":{"rendered":"Instant Pot Chana Masala"},"content":{"rendered":"\n<p>Chana Masala or Chole is one-pot healthy protein-rich vegan and gluten free recipe cooked in a spicy, flavorful onion-tomato gravy along with few spices.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients\u00a0\u00a0<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0cup\u00a0dry chickpeas (chole\/garbanzo beans)\u00a0soaked overnight<\/li>\n\n\n\n<li>2\u00a0tablespoon\u00a0oil<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0cumin (jeera) seeds<\/li>\n\n\n\n<li>1\u00a0bay leaf (tej patta)<\/li>\n\n\n\n<li>1&nbsp;medium&nbsp;onion&nbsp;finely chopped<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0ginger-garlic paste<\/li>\n\n\n\n<li>1&nbsp;green chilli&nbsp;finely chopped<\/li>\n\n\n\n<li>2&nbsp;large&nbsp;tomato&nbsp;(i made tomato puree about 1 cup)<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0amchur powder (dry mango powder)\u00a0or juice of half lemon<\/li>\n\n\n\n<li>2&nbsp;tablespoons&nbsp;cilantro (coriander leaves)<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0dried kasuri methi (optional)<\/li>\n\n\n\n<li>1.5&nbsp;cups&nbsp;water<\/li>\n\n\n\n<li>salt\u00a0to taste<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Spices:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0teaspoon\u00a0coriander powder<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0chana (chole masala)<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0red chili powder<\/li>\n\n\n\n<li>\u00bc\u00a0teaspoon\u00a0turmeric powder<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions&nbsp;<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Instant Pot Method<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Soak Chole (chickpeas) for at least 4+ hours or overnight. Then, drain water and keep it aside.<\/li>\n\n\n\n<li>Press SAUTE on Instant Pot. Heat oil, add cumin seeds, bay leaf, and let cumins splutter.<\/li>\n\n\n\n<li>Then add onions, green chilies, ginger-garlic paste, and saute until onions turn light brown for 3-4 minutes.<\/li>\n\n\n\n<li>Next, add tomato puree and the spices like red chili powder, turmeric powder, chole masala powder, coriander powder, and cook for 2 minutes.<\/li>\n\n\n\n<li>Lastly, add soaked chickpeas, salt, and water. Stir well.<\/li>\n\n\n\n<li>Close the lid on the pot, and turn the pressure valve to the SEALING position. Select the\u00a0PRESSURE COOK\/MANUAL (High Pressure)\u00a0setting and set the cooking time to\u00a030 minutes.<\/li>\n\n\n\n<li>Once the pot beeps, do a NATURAL PRESSURE RELEASE (NPR).<\/li>\n\n\n\n<li>Remove lid away from you, add amchur powder (dry mango powder), Kasuri methi (dried fenugreek leaves) and garnish with cilantro. Mix well<\/li>\n\n\n\n<li>.Note:\u00a0Don&#8217;t worry if the curry is a too liquid consistency. Turn on SAUTE mode again and boil the curry for 5 minutes or until you get the desired consistency.<\/li>\n\n\n\n<li>Chole Masala is ready, serve hot with bathura, pooris, chapatis, roti &amp; parathas.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Stovetop Pressure Cooker Method:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Follow the same steps as above. Cook for&nbsp;<strong>5-6 whistles<\/strong>&nbsp;on the medium-high flame in the stovetop pressure cooker.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Stovetop Pot Method<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Pressure cook the soaked chickpeas (garbanzo beans) with 3 cups of water and a little salt in the traditional stovetop pressure cooker (or Instant Pot).<strong>Instant Pot:<\/strong>&nbsp;Pressure cook on Manual (High Pressure) for 30 minutes with natural pressure release.<strong>Stovetop<\/strong>&nbsp;<strong>Pressure Cooker:<\/strong>&nbsp;Pressure cook on high heat for 5-6 whistles, followed by natural pressure release.<strong>Note:<\/strong>&nbsp;The cooked chickpeas\/chana should be soft and easily mashed when pressed between the finger and thumb. Set aside.<\/li>\n\n\n\n<li>Heat oil in a large pot (or dutch oven). Add cumin seeds, and bay leaf, and let cumins splutter.<\/li>\n\n\n\n<li>Then add onions and saute for 3-4 minutes or until onions turn light brown.<\/li>\n\n\n\n<li>Add green chilies, and minced ginger garlic and saute till the raw smell of the ginger-garlic goes away.<\/li>\n\n\n\n<li>Then add 1 cup of pureed tomatoes (or finely chopped tomatoes). Cook for 2-3 minutes, or till the mixture thickens.<\/li>\n\n\n\n<li>Add spices like red chili powder, turmeric powder, coriander powder, chana masala, and salt. Mix well. Cook the masala until the oil oozes out from the sides.<\/li>\n\n\n\n<li>Lastly, add the cooked chickpeas, along with the stalk (or 1 cup of water). Stir well.<\/li>\n\n\n\n<li>Bring the mixture to a boil and then lower the heat, cover and simmer for 10-15 minutes.<\/li>\n\n\n\n<li>Mash a few chickpeas with the back of the ladle or spoon. This makes the curry thick and creamy.<\/li>\n\n\n\n<li>Add amchur powder, crush some kasuri methi between your palms, and add to the gravy. Mix well. Don&#8217;t worry if the curry is a too liquid consistency. The curry will thicken as it cools down.<\/li>\n\n\n\n<li>Garnish with coriander leaves.
