{"id":1504,"date":"2023-08-15T13:43:30","date_gmt":"2023-08-15T13:43:30","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=1504"},"modified":"2023-08-15T13:43:32","modified_gmt":"2023-08-15T13:43:32","slug":"vegetarian-skillet-enchiladas","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/08\/15\/vegetarian-skillet-enchiladas\/13\/43\/1504\/30\/appdev2098\/countries-dinner-ideas\/mexican-dinners\/","title":{"rendered":"Vegetarian Skillet Enchiladas"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 tablespoon canola oil<\/li>\n\n\n\n<li>1 medium onion, chopped<\/li>\n\n\n\n<li>1 medium sweet red pepper, chopped<\/li>\n\n\n\n<li>2 garlic cloves, minced<\/li>\n\n\n\n<li>1 can (15 ounces) black beans, rinsed and drained<\/li>\n\n\n\n<li>1 can (10 ounces) enchilada sauce<\/li>\n\n\n\n<li>1 cup frozen corn<\/li>\n\n\n\n<li>2 teaspoons chili powder<\/li>\n\n\n\n<li>1\/2 teaspoon ground cumin<\/li>\n\n\n\n<li>1\/8 teaspoon pepper<\/li>\n\n\n\n<li>8 corn tortillas (6 inches), cut into 1\/2-inch strips<\/li>\n\n\n\n<li>1 cup shredded Mexican cheese blend<\/li>\n\n\n\n<li>Optional: Chopped fresh cilantro, sliced avocado, sliced radishes, sour cream and lime wedges<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 400\u00b0. Heat oil in a 10-in. cast-iron or other ovenproof skillet over medium-high heat. Add onion and pepper; cook and stir until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Stir in beans, enchilada sauce, corn, chili powder, cumin and pepper. Stir in tortilla strips.<\/li>\n\n\n\n<li>Bring to a boil. Reduce heat; simmer, uncovered, until tortilla strips are softened, 3-5 minutes. Sprinkle with cheese. Bake, uncovered, until sauce is bubbly and cheese is melted, 3-5 minutes.
