{"id":1542,"date":"2023-08-15T13:54:58","date_gmt":"2023-08-15T13:54:58","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=1542"},"modified":"2023-08-15T13:54:59","modified_gmt":"2023-08-15T13:54:59","slug":"chicken-fajita-salad","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/08\/15\/chicken-fajita-salad\/13\/54\/1542\/58\/appdev2098\/countries-dinner-ideas\/mexican-dinners\/","title":{"rendered":"Chicken Fajita Salad"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 tablespoons canola oil, divided<\/li>\n\n\n\n<li>1\/2 cup lime juice<\/li>\n\n\n\n<li>2 garlic cloves, minced<\/li>\n\n\n\n<li>1 teaspoon ground cumin<\/li>\n\n\n\n<li>1 teaspoon dried oregano<\/li>\n\n\n\n<li>1 pound boneless skinless chicken breasts, cut into thin strips<\/li>\n\n\n\n<li>1 medium onion, cut into thin wedges<\/li>\n\n\n\n<li>1 medium sweet red pepper, cut into thin strips<\/li>\n\n\n\n<li>2 cans (4 ounces each) chopped green chiles<\/li>\n\n\n\n<li>1 cup unblanched almonds, toasted<\/li>\n\n\n\n<li>3 cups shredded lettuce<\/li>\n\n\n\n<li>3 medium tomatoes, cut into wedges<\/li>\n\n\n\n<li>1 medium ripe avocado, peeled and sliced<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a small bowl, combine 2 tablespoons oil, lime juice, garlic, cumin and oregano. Pour half in a large bowl or dish; add chicken and turn to coat. Marinate for at least 30 minutes. Cover and refrigerate remaining marinade.<\/li>\n\n\n\n<li>In a large skillet, heat remaining oil on medium-high. Saute onion for 2-3 minutes or until crisp-tender.<\/li>\n\n\n\n<li>Drain chicken, discarding marinade. Add chicken to skillet; stir-fry until meat is no longer pink. Add the red pepper, chiles and reserved marinade; cook 2 minutes or until heated through. Stir in almonds.
