{"id":1707,"date":"2023-08-16T11:47:09","date_gmt":"2023-08-16T11:47:09","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=1707"},"modified":"2023-08-21T12:44:00","modified_gmt":"2023-08-21T12:44:00","slug":"instant-pot-vegetable-biryani","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/08\/16\/instant-pot-vegetable-biryani\/11\/47\/1707\/09\/appdev2098\/countries-dinner-ideas\/indian-dinner\/","title":{"rendered":"Instant Pot Vegetable Biryani"},"content":{"rendered":"\n<p>A simple, easy and flavorful vegetable biryani recipe made in the Instant pot pressure cooker with layers of spiced vegetables, warm spices, herbs like mint and cilantro, fried onions and basmati rice.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Vegetable Marination for Biryani:<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bd&nbsp;cup&nbsp;thick yogurt (hung curd)&nbsp;(thick coconut milk or use vegan yogurt)<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0ginger garlic paste\u00a0<\/li>\n\n\n\n<li>1&nbsp;large&nbsp;carrot&nbsp;diced, (about 1 cup)<\/li>\n\n\n\n<li>1&nbsp;cup&nbsp;green beans&nbsp;cut in 1&nbsp;inch&nbsp;pieces<\/li>\n\n\n\n<li>1&nbsp;cup&nbsp;cauliflower&nbsp;cut in large florets about 1.5-2 inch<\/li>\n\n\n\n<li>1\u00a0cup\u00a0paneer\u00a0cubed into \u00bd inch cubes<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0turmeric powder<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0red chilli powder<\/li>\n\n\n\n<li>1.5\u00a0tablespoons\u00a0biryani masala powder<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0lemon juice<\/li>\n\n\n\n<li>salt\u00a0adjust to taste<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Whole Spices:<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0bay leaf<\/li>\n\n\n\n<li>1\u00a0inch\u00a0cinnamon stick<\/li>\n\n\n\n<li>3\u00a0cloves<\/li>\n\n\n\n<li>3\u00a0cardamom<\/li>\n\n\n\n<li>1\u00a0star anise<\/li>\n\n\n\n<li>1\u00a0single strands of mace<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0shah jeera\u00a0(cumin seeds)<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Other Ingredients:<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0cup\u00a0basmati rice\u00a0rinsed &amp; soaked for 20 minutes<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0ghee\u00a0(use oil for vegan)<\/li>\n\n\n\n<li>1&nbsp;large&nbsp;onion&nbsp;thinly sliced (about 1 cup)<\/li>\n\n\n\n<li>\u00bc&nbsp;cup&nbsp;mint leaves (pudina)&nbsp;chopped<\/li>\n\n\n\n<li>\u00bc&nbsp;cup&nbsp;coriander leaves(cilantro)&nbsp;&nbsp;finely chopped<\/li>\n\n\n\n<li>\u00bc\u00a0cup\u00a0fried onions\u00a0divided<\/li>\n\n\n\n<li>3&nbsp;tablespoons&nbsp;milk&nbsp;(use water for vegan)<\/li>\n\n\n\n<li>saffron(kesar)\u00a0few strands<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0ghee\u00a0optional<\/li>\n\n\n\n<li>1 \u00bc&nbsp;cups&nbsp;water<\/li>\n\n\n\n<li>salt\u00a0adjust to taste<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions&nbsp;<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Pre Preparation:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Rinse the basmati rice and soak for 15-20 minutes. Drain and keep aside.<\/li>\n\n\n\n<li>Add warmed milk to a bowl and soak the saffron strands in it. Keep aside.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Marinating the Vegetables:<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Take yogurt, ginger-garlic paste, turmeric, red chili powder, biryani masala powder, lemon juice, salt in a large mixing bowl and mix well.<\/li>\n\n\n\n<li>Now add the chopped vegetables, mix very well and marinate for at least 15 to 20 minutes.However, if you don&#8217;t have time, skip this step and add the veggies, yogurt into the instant pot directly and saute.<img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"300\" alt=\"steps to marinate vegetables with yogurt and spices in a bowl\" src=\"\"><\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Instant Pot Method:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Press\u00a0<strong>SAUTE<\/strong>\u00a0on Instant Pot. Add ghee or oil in to the POT along with the whole spices and saute for 30 seconds.<\/li>\n\n\n\n<li>Secondly, Add sliced onions and saute for about 4-5 minutes or till onions caramelize.<\/li>\n\n\n\n<li>Furthermore, add the marinated vegetables into the pot. Mix everything well and saute for 1 minute.Also,\u00a0<strong>Deglaze<\/strong>\u00a0the bottom of the pot using liquids from the vegetables to remove any stuck bits to avoid\u00a0<strong>BURN<\/strong>\u00a0alert.<\/li>\n\n\n\n<li>Top with half of the coriander leaves, mint leaves and fried onions. Do not mix.<\/li>\n\n\n\n<li>Spread the soaked basmati rice evenly over the veggies.<img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"150\" alt=\"steps to add basmati rice to veg biryani in cooker collage\" src=\"\"><\/li>\n\n\n\n<li>Now again top with leftover coriander leaves, mint leaves and fried onions. Sprinkle saffron milk on top of the rice and do not mix.<\/li>\n\n\n\n<li>Add water gently all around along the sides of the pot. Don\u2019t add water in the center. Make sure rice is just immersed under water.Do not mix the ingredients. After the pot beeps,\u00a0Quick Pressure Release\u00a0to stop overcooking the rice and vegetables.<\/li>\n\n\n\n<li>Open the pot and fluff up the rice.
