An easy make-ahead recipe, they only take a few minutes to throw together. These breakfast muffins are delicious, healthy and nutritious, perfect for busy mornings!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Non-stick cooking spray,\u00a0(It&#8217;s important to use non-stick cooking spray, as the regular oil spray won&#8217;t prevent eggs from sticking.)<\/li>\n\n\n\n<li>12&nbsp;large eggs<\/li>\n\n\n\n<li>1\u00a0cup\u00a0cooked bacon,\u00a0crumbled (I use store-bought pre-cooked bacon, but you can cook your own if inclined)<\/li>\n\n\n\n<li>1\u00a0cup\u00a0fresh baby spinach,\u00a0roughly chopped<\/li>\n\n\n\n<li>1\u00a0cup\u00a0red bell pepper,\u00a0diced<\/li>\n\n\n\n<li>\u00bd&nbsp;cup&nbsp;onions,&nbsp;<em>diced<\/em><\/li>\n\n\n\n<li>1\u00a0cup\u00a0shredded cheddar cheese,\u00a0(I use pre-shredded cheddar cheese, you can use your favorite cheese such as mozzarella)<\/li>\n\n\n\n<li>1\/4&nbsp;teaspoon&nbsp;salt<\/li>\n\n\n\n<li>1\/4&nbsp;teaspoon&nbsp;pepper<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions&nbsp;<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">How to cook egg muffins:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 350\u00b0F (180\u00b0C). Spray a 12-cup muffin pan with non-stick oil spray and set aside.<\/li>\n\n\n\n<li>Wash, dry and dice red bell pepper and onions. Dry spinach and chop it roughly.<\/li>\n\n\n\n<li>Add cooked bacon, red bell pepper, onions and spinach in each muffin tin, about 2\/3 full. (Divide evenly among greased muffin cups.)<\/li>\n\n\n\n<li>In a large measuring cup, whisk eggs and season with salt and pepper. Mix until well combined. (I recommend using a measuring cup for easy pouring.)<\/li>\n\n\n\n<li>Add in the egg mixture and fill each muffin tin 3\/4 full. Sprinkle cheddar cheese on top.<\/li>\n\n\n\n<li>Bake for about 20 minutes or until a toothpick inserted in the center comes out clean.<\/li>\n\n\n\n<li>As soon as you take the muffins out from the oven, run a small spatula around the edges of each muffin to loosen.<\/li>\n\n\n\n<li>Remove them from the muffin tin. Serve warm immediately or freeze for meal prep.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">How to freeze egg muffins:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Let baked egg muffins cool down completely.<\/li>\n\n\n\n<li>Wrap them in plastic wrap individually and place them in a freezer-safe zip-lock bag.
