They&#8217;re pretty low in calories, and they couldn\u2019t be easier to make \u2013 just throw the wet ingredients into the dry, stir, and bake!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">INGREDIENTS\u00a0<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2\u00bd\u00a0cups\u00a0all-purpose flour\u00a0 plain flour Cake flour also works. You can substitute some or all for white whole wheat flour if you like.<\/li>\n\n\n\n<li>1&nbsp;tablespoon&nbsp;baking powder<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0baking soda\u00a0 bicarbonate of soda<\/li>\n\n\n\n<li>\u00bd&nbsp;cup&nbsp;sugar&nbsp;(heaped)<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0salt<\/li>\n\n\n\n<li>2&nbsp;large&nbsp;eggs&nbsp;lightly beaten<\/li>\n\n\n\n<li>\u2154&nbsp;cups&nbsp;oil&nbsp;(I use either canola or light olive oil, but any oil is fine.)<\/li>\n\n\n\n<li>1&nbsp;cup&nbsp;Greek yogurt&nbsp;I prefer authentic Greek yogurt, but any Greek yogurt works. You may have to adjust the amount of milk.<\/li>\n\n\n\n<li>\u00bc&nbsp;cup&nbsp;milk&nbsp;(Actually, \u00bc to \u00bd cup. The mixture should be quite thick, but if it&#8217;s dry add a little more milk.)<\/li>\n\n\n\n<li>1\u00bd&nbsp;cups&nbsp;blueberries<\/li>\n\n\n\n<li>extra sugar\u00a0for sprinkling (optional)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS&nbsp;<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat the oven to 190C\/375F.<\/li>\n\n\n\n<li>Combine the flour, baking powder, baking soda, sugar and salt in a large bowl.2\u00bd cups all-purpose flour,1 tablespoon baking powder,\u00bd teaspoon baking soda,\u00bd cup sugar,\u00bd teaspoon salt<\/li>\n\n\n\n<li>Combine the eggs, oil, yogurt, and milk in another bowl or jug.2 large eggs,\u2154 cups oil,1 cup Greek yogurt,\u00bc cup milk<\/li>\n\n\n\n<li>Add the wet ingredients to the dry. Stir until just combined. Fold in the blueberries. Add a tiny bit more milk if the mixture still seems too thick (the consistency of the batter can vary depending on which brand of yoghurt you use). The batter will be fairly thick, but not dry.<\/li>\n\n\n\n<li>Spoon the batter into muffin cases placed in muffin pans (you can fill almost to the top).
