Make it for breakfast or brunch!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bd\u00a0cup\u00a0quinoa<\/li>\n\n\n\n<li>1.5\u00a0tablespoon\u00a0oil\u00a0\u2013 any neutral tasting oil<\/li>\n\n\n\n<li>\u2153\u00a0cup\u00a0finely chopped onions\u00a0or 1 small to medium-sized<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0finely chopped ginger\u00a0or \u00bd inch ginger<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0chopped green chilies\u00a0or 1 to 2 green chilies \u2013 chopped<\/li>\n\n\n\n<li>1\u00a0dry red chili\u00a0\u2013 stem and seeds removed, optional<\/li>\n\n\n\n<li>1\u00a0pinch\u00a0asafoetida\u00a0(hing) \u2013 optional<\/li>\n\n\n\n<li>7 to 8\u00a0curry leaves<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0mustard seeds<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0cumin seeds<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0urad dal\u00a0(husked and split black gram)<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0moong dal\u00a0(yellow mung lentils)<\/li>\n\n\n\n<li>\u2153\u00a0cup\u00a0finely chopped carrots\u00a0or 1 small carrot<\/li>\n\n\n\n<li>\u00bc\u00a0cup\u00a0finely chopped french beans\u00a05 to 6 french beans<\/li>\n\n\n\n<li>\u2153\u00a0cup\u00a0green peas\u00a0\u2013 frozen<\/li>\n\n\n\n<li>1\u00a0cup\u00a0water<\/li>\n\n\n\n<li>salt\u00a0as required<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0chopped coriander leaves\u00a0(cilantro)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions&nbsp;<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Take the quinoa in a fine mesh strainer and rinse well in running water. Drain the water and set aside.<\/li>\n\n\n\n<li>Heat the oil in a pan. Keep the heat to a low. Add mustard seeds.<\/li>\n\n\n\n<li>Once the mustard seeds begin crackling, then add cumin seeds, urad dal and moong dal or chana dal.<\/li>\n\n\n\n<li>Stir often and fry on a low heat until the urad dal and moong dal turn golden.<\/li>\n\n\n\n<li>Then add finely chopped ginger, chopped green chilies, dry red chili and a pinch of asafoetida (optional). Fry on low heat for about half a minute.<\/li>\n\n\n\n<li>Next add finely chopped onions and curry leaves.<\/li>\n\n\n\n<li>Stir and saut\u00e9 on a low to medium heat till the onions become translucent and soften.<\/li>\n\n\n\n<li>Then add finely chopped carrots, finely chopped french beans and frozen green peas. Mix well.<\/li>\n\n\n\n<li>Saut\u00e9 on a low heat for two minutes.<\/li>\n\n\n\n<li>Then add the quinoa and mix very well again.<\/li>\n\n\n\n<li>Saut\u00e9 for a minute or two on low heat.<\/li>\n\n\n\n<li>Add water and mix again.<\/li>\n\n\n\n<li>Add salt as per taste. Check the taste of the water and add more salt if needed.<\/li>\n\n\n\n<li>Cover the pan with its lid and simmer on a low heat till the quinoa seeds are cooked, softened, look translucent and fluffy.<\/li>\n\n\n\n<li>Once or twice you can stir the quinoa while the seeds are being cooked.<\/li>\n\n\n\n<li>When all the water has been absorbed and the grains appear translucent and cooked well, remove the lid and switch off the heat.<\/li>\n\n\n\n<li>Add the chopped coriander leaves.<\/li>\n\n\n\n<li>Give a quick stir and serve vegetable quinoa upma hot or warm with a few lemon wedges or coconut chutney or lime pickle.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Quinoa upma is a nutritious, hearty upma variant made with nutty quinoa seeds, vibrant seasonings and heathy mixed veggies.
