{"id":2837,"date":"2023-09-01T05:15:42","date_gmt":"2023-09-01T05:15:42","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=2837"},"modified":"2023-09-01T05:15:44","modified_gmt":"2023-09-01T05:15:44","slug":"chicken-sotanghon-soup","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/01\/chicken-sotanghon-soup\/05\/15\/2837\/42\/appdev2098\/filipino-food\/chicken-filipino-food\/","title":{"rendered":"CHICKEN SOTANGHON SOUP"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>8&nbsp;oz&nbsp;vermicelli&nbsp;(bean thread noodle)<\/li>\n\n\n\n<li>6&nbsp;dried shitake mushrooms<\/li>\n\n\n\n<li>2&nbsp;tbsp&nbsp;olive oil<\/li>\n\n\n\n<li>2&nbsp;cloves&nbsp;garlic&nbsp;, minced<\/li>\n\n\n\n<li>1&nbsp;onion&nbsp;, chopped<\/li>\n\n\n\n<li>2&nbsp;cups&nbsp;shredded cooked chicken meat&nbsp;( I used rotisserie chicken meat )<\/li>\n\n\n\n<li>2&nbsp;tbsp&nbsp;fish sauce or 2 tsp salt<\/li>\n\n\n\n<li>1\/8&nbsp;tsp&nbsp;white pepper<\/li>\n\n\n\n<li>8&nbsp;cups&nbsp;chicken broth&nbsp;( I used homemade broth, see notes below for recipe )<\/li>\n\n\n\n<li>Chopped green onions<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS&nbsp;<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Soak bean thread noodles in warm water for 15 minutes, drain and set aside.<\/li>\n\n\n\n<li>Soak shitake mushrooms in hot water for 20 minutes. Squeeze out the excess water. Discard the stems and thinly slice the caps. Set aside.<\/li>\n\n\n\n<li>Heat a pot over medium heat. Add oil and saut\u00e9 garlic until golden brown. Add onions and saut\u00e9 for 2 minutes or until soft. Add mushrooms and chicken meat; saut\u00e9 for 2-3 minutes.<\/li>\n\n\n\n<li>Add fish sauce (or salt), white pepper and broth, bring to a boil. Add drained noodles and cook for 3 -5 minutes or until noodles are tender. Transfer to a soup bowl.
