{"id":2893,"date":"2023-09-01T05:39:33","date_gmt":"2023-09-01T05:39:33","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=2893"},"modified":"2023-09-01T05:39:34","modified_gmt":"2023-09-01T05:39:34","slug":"morcon-recipe","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/01\/morcon-recipe\/05\/39\/2893\/33\/appdev2098\/filipino-food\/christmas\/","title":{"rendered":"MORCON RECIPE"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 \u00bd&nbsp;pounds&nbsp;flank steak<\/li>\n\n\n\n<li>5&nbsp;tablespoons&nbsp;calamansi or lemon juice<\/li>\n\n\n\n<li>\u00bd&nbsp;cup&nbsp;soy sauce<\/li>\n\n\n\n<li>\u00bc&nbsp;teaspoon&nbsp;ground black pepper<\/li>\n\n\n\n<li>12&nbsp;slices&nbsp;bacon<\/li>\n\n\n\n<li>1&nbsp;medium carrot&nbsp;peeled and cut lengthwise<\/li>\n\n\n\n<li>2&nbsp;chorizo de bilbao or hotdog<\/li>\n\n\n\n<li>3&nbsp;pieces&nbsp;Dill Spears or Sweet Pickles&nbsp;cut lengthwise<\/li>\n\n\n\n<li>Cheddar cheese&nbsp;sliced lengthwise<\/li>\n\n\n\n<li>4&nbsp;hard boiled eggs&nbsp;peeled and cut in half<\/li>\n\n\n\n<li>\u00bd&nbsp;cup&nbsp;flour<\/li>\n\n\n\n<li>\u00bc&nbsp;cup&nbsp;oil<\/li>\n\n\n\n<li>Kitchen twine<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Sauce<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1&nbsp;small onion&nbsp;chopped<\/li>\n\n\n\n<li>4&nbsp;cloves&nbsp;garlic&nbsp;minced<\/li>\n\n\n\n<li>marinade used on beef<\/li>\n\n\n\n<li>1&nbsp;can 8 oz \u2013 227g tomato sauce<\/li>\n\n\n\n<li>2 \u00bd&nbsp;cups&nbsp;beef broth or water<\/li>\n\n\n\n<li>2&nbsp;bay leaf<\/li>\n\n\n\n<li>\u00bc&nbsp;teaspoon&nbsp;garlic powder<\/li>\n\n\n\n<li>salt and pepper to taste<\/li>\n\n\n\n<li>1&nbsp;small can 4 oz liver spread<\/li>\n\n\n\n<li>\u00bc\u00a0cup\u00a0grated cheddar cheese<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>When making beef morcon use this cut: flank steak, beef top or bottom round, eye of round or top sirloin. I\u2019m not sure if you can use skirt steak.<\/li>\n\n\n\n<li>Slice beef to \u2153 or \u00bd inch thick measuring around 6 \u00bd x 8 inches forming a rectangle. This size or smaller is much easier to handle and tie with a kitchen twine. Make sure the beef rolls fit your skillet.<\/li>\n\n\n\n<li>Marinate beef in calamansi or lemon juice, ground black pepper and soy sauce for at least 2 hours in the fridge. Make sure beef is submerged in marinate.<\/li>\n\n\n\n<li>After 2 hours or longer, remove beef from marinate. Don\u2019t discard the marinate. Set it aside.<\/li>\n\n\n\n<li>Lay beef flat on any surface and add slices of bacon on top of beef. Then add a slice of sausage, chorizo or hotdog, dill or pickle, egg and carrot. Roll beef into a log securing it with a kitchen twine.<\/li>\n\n\n\n<li>Lighly dredge beef roll in flour.<\/li>\n\n\n\n<li>Heat oil in a deep skillet.<\/li>\n\n\n\n<li>Fry beef rolls for about 5 minutes, turning it to cook evenly to a medium brown. Remove from skillet and set aside.<\/li>\n\n\n\n<li>On the same skillet, add more oil if needed.<\/li>\n\n\n\n<li>Saute onion for 2 minutes.<\/li>\n\n\n\n<li>Add garlic and cook till golden.<\/li>\n\n\n\n<li>Pour beef marinate and bring to a boil.<\/li>\n\n\n\n<li>Add bay leaves.<\/li>\n\n\n\n<li>Pour tomato sauce and bring to a boil.<\/li>\n\n\n\n<li>Add broth and bring to boil.<\/li>\n\n\n\n<li>Lower heat to medium low.<\/li>\n\n\n\n<li>Add beef rolls and simmer for 45 minutes to an hour or until beef is tender.<\/li>\n\n\n\n<li>Add garlic powder.<\/li>\n\n\n\n<li>Remove beef roll and let it rest for about 5 minutes.<\/li>\n\n\n\n<li>Note: There will be too much sauce left on the skillet.<\/li>\n\n\n\n<li>Leave 3 to 4 cups of sauce in the skillet and thicken with liver spread or cheese or both. Season with salt and pepper, if needed. Bring to a boil then turn off heat.<\/li>\n\n\n\n<li>Slice morcon.
