{"id":2921,"date":"2023-09-01T05:48:22","date_gmt":"2023-09-01T05:48:22","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=2921"},"modified":"2023-09-01T05:48:22","modified_gmt":"2023-09-01T05:48:22","slug":"pancit-malabon","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/01\/pancit-malabon\/05\/48\/2921\/22\/appdev2098\/filipino-food\/christmas\/","title":{"rendered":"PANCIT MALABON"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1&nbsp;package 8oz 227g luglug&nbsp;(cornstarch stick or thick rice noodles)<\/li>\n\n\n\n<li>\u00be&nbsp;pound&nbsp;ground pork<\/li>\n\n\n\n<li>\u00bd&nbsp;teaspoon&nbsp;powdered annatto seeds or \u00bc cup annatto seeds diluted in \u00bc cup water<\/li>\n\n\n\n<li>4 to 5&nbsp;cups&nbsp;shrimp juice<\/li>\n\n\n\n<li>5&nbsp;tablespoons&nbsp;fish sauce&nbsp;patis<\/li>\n\n\n\n<li>\u00bd&nbsp;teaspoon&nbsp;ground black pepper<\/li>\n\n\n\n<li>8&nbsp;cloves&nbsp;of garlic&nbsp;minced<\/li>\n\n\n\n<li>1&nbsp;medium-sized onion&nbsp;minced<\/li>\n\n\n\n<li>1 \u00bd&nbsp;cup&nbsp;pork rinds&nbsp;chicharon, pounded<\/li>\n\n\n\n<li>\u00bd&nbsp;pound&nbsp;shrimp&nbsp;shelled<\/li>\n\n\n\n<li>\u00bc&nbsp;pound&nbsp;pusit&nbsp;cut<\/li>\n\n\n\n<li>1&nbsp;piece&nbsp;lemon&nbsp;sliced<\/li>\n\n\n\n<li>3&nbsp;pieces&nbsp;hard boiled eggs&nbsp;sliced<\/li>\n\n\n\n<li>\u00bc&nbsp;cup&nbsp;toasted garlic<\/li>\n\n\n\n<li>4-5&nbsp;tablespoons&nbsp;cornstarch&nbsp;diluted in 4 tablespoon water.<\/li>\n\n\n\n<li>3\u00a0tablespoon\u00a0tinapa flakes\u00a0optional<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>When using luglug noodles (cornstarch stick) soak it in water for \u00bd to an hour.Boil water then submerge luglug noodles for 5 minutes or when desired texture is obtained. Follow the instruction provided on the package. Drain and set aside.<\/li>\n\n\n\n<li>Heat oil over medium to low heat.<\/li>\n\n\n\n<li>Fry shrimp till pink. Remove from pan and set aside.<\/li>\n\n\n\n<li>Fry squid for 2 minutes. Set aside too.<\/li>\n\n\n\n<li>On the same pan, saute onion for 2 minutes.<\/li>\n\n\n\n<li>Add garlic and cook till light golden brown.<\/li>\n\n\n\n<li>Add fish sauce.<\/li>\n\n\n\n<li>Put ground pork and cook till pale or light brown..<\/li>\n\n\n\n<li>Before making the shrimp stock, remove some of the fat from the shrimp head and saute. This is optional but it adds so much flavor.<\/li>\n\n\n\n<li>Stir-in annatto powder or annatto water.<\/li>\n\n\n\n<li>Add ground black pepper.<\/li>\n\n\n\n<li>Pour shrimp stock. Bring to a boil.<\/li>\n\n\n\n<li>Let it simmer for 15 minutes over low heat.<\/li>\n\n\n\n<li>Slowly pour cornstarch mixture while stirring constantly until sauce turns thick. Let it simmer for 3 minutes and continue stirring.Note: Make more cornstarch mixture if sauce is still not thick.<\/li>\n\n\n\n<li>Taste sauce, add more fish sauce, if you like.<\/li>\n\n\n\n<li>Add noodles and mix well. Turn off heat.<\/li>\n\n\n\n<li>Quickly add 1 cup of ground pork rind or cracklings.
