{"id":3479,"date":"2023-09-13T06:48:51","date_gmt":"2023-09-13T06:48:51","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=3479"},"modified":"2023-09-13T06:48:52","modified_gmt":"2023-09-13T06:48:52","slug":"easy-chicken-pakora","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/13\/easy-chicken-pakora\/06\/48\/3479\/51\/appdev2098\/healthy-indian-recipes\/chicken-healthy-indian-recipes\/","title":{"rendered":"Easy Chicken Pakora"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">For the Chicken Pakora<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1.25&nbsp;pounds&nbsp;chicken breast&nbsp;<em>(cut into 1 inch pieces)<\/em><\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0salt<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0ground cumin<\/li>\n\n\n\n<li>1 1\/2\u00a0teaspoons\u00a0ground kashmiri chile\u00a0(or 1 tsp paprika + 1\/2 tsp cayenne)<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0garlic powder<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0onion powder<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0garam masala<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0ground ginger<\/li>\n\n\n\n<li>1\/2\u00a0teaspoon\u00a0ground turmeric<\/li>\n\n\n\n<li>2&nbsp;egg whites<\/li>\n\n\n\n<li>1\/3&nbsp;cup&nbsp;fresh lemon juice<\/li>\n\n\n\n<li>1\/4&nbsp;cup&nbsp;chopped cilantro<\/li>\n\n\n\n<li>1\u00a0cup\u00a0chickpea flour\u00a0(gram or besan flour)<\/li>\n\n\n\n<li>oil for frying\u00a0(I like peanut oil for this recipe.)<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the Raita Sauce<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1&nbsp;cup&nbsp;plain greek-style yogurt<\/li>\n\n\n\n<li>1\/4&nbsp;cup&nbsp;chopped onion<\/li>\n\n\n\n<li>2&nbsp;tablespoons&nbsp;lemon juice<\/li>\n\n\n\n<li>1-2\u00a0tablespoons\u00a0granulated sugar<\/li>\n\n\n\n<li>1&nbsp;tablespoon&nbsp;chopped cilantro<\/li>\n\n\n\n<li>1\/4\u00a0teaspoon\u00a0salt<\/li>\n\n\n\n<li>1\/4\u00a0teaspoon\u00a0ground cumin<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the Green Chutney<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0large\u00a0bunch cilantro\u00a0(stems and leaves)<\/li>\n\n\n\n<li>1\/4&nbsp;cup&nbsp;chopped onion<\/li>\n\n\n\n<li>3&nbsp;tablespoon&nbsp;fresh mint leaves<\/li>\n\n\n\n<li>3&nbsp;tablespoons&nbsp;fresh lemon juice<\/li>\n\n\n\n<li>3&nbsp;tablespoons&nbsp;plain greek-style yogurt<\/li>\n\n\n\n<li>1\/2 \u2013 1\u00a0whole\u00a0serrano pepper,\u00a0stem removed<\/li>\n\n\n\n<li>2\u00a0cloves\u00a0garlic<\/li>\n\n\n\n<li>1\u00a0inch\u00a0piece fresh ginger<\/li>\n\n\n\n<li>1\/4\u00a0teaspoon\u00a0salt<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Marinate the Chicken Pakora:&nbsp;<\/strong>Set out a large mixing bowl. Add the chicken pieces, salt, all spices, egg whites, lemon juice, and cilantro. Mix well to coat and set aside for at least 10 minutes. (If you are sensitive to spice, use only 1\/2 \u2013 1 teaspoon kashmiri chile.)<\/li>\n\n\n\n<li>Meanwhile, set a large saucepot over medium heat. Add a cooking thermometer to the side of the pot. Then pour in 1 1\/2 \u2013 2 inches of high-heat cooking oil. Wait until the temperature rises to 350-360 degrees F.<\/li>\n\n\n\n<li><strong>Make the dipping sauces:<\/strong>&nbsp;Set out a blender. Starting with the Raita, place all the ingredients in the blender. (Start with 1 tablespoon of sugar, then add more if needed.) Cover and puree until smooth. Pour the Raita in a bowl and refrigerate until ready to use.<\/li>\n\n\n\n<li>Next, add all the Green Chutney ingredients to the blender. (No need to wash the blender jar in between.) Add the entire bunch of cilantro, stems and all. If you are sensitive to spice, use only half of the serrano pepper and remove the seeds. Pour in 1\/4 cup water. Cover and puree until smooth. Pour the green chutney into a bowl and set aside.<\/li>\n\n\n\n<li><strong>Prep the Chicken for Frying:&nbsp;<\/strong>When the oil is close to 350-360 degrees F, use a spoon to mix the chickpea flour into the chicken and marinade. Mix well. Then mix in 1\/4 \u2013 1\/3 cup water to loosen the batter. Be careful not to add too much water. It should be thick and pasty, so it sticks to the chicken well.<\/li>\n\n\n\n<li><strong>Fry The Chicken:<\/strong>\u00a0Set out a holding plate lined with paper towels. Working in 3-4 small batches, carefully drop the coated chicken pieces in the hot oil, one at a time. Use a\u00a0spider skimmer\u00a0to immediately flip each piece over so it doesn&#8217;t stick to the bottom of the pot. Once you have at least a quarter of the chicken in the pot, fry the chicken pakora for 3-4 minutes until it reaches a rich golden-brown color. Use the skimmer to move the chicken pakora to the holding plate.
