{"id":3569,"date":"2023-09-13T07:38:59","date_gmt":"2023-09-13T07:38:59","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=3569"},"modified":"2023-09-13T07:39:01","modified_gmt":"2023-09-13T07:39:01","slug":"mutton-lamb-in-a-kashmiri-chilli-pepper-gravy","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/13\/mutton-lamb-in-a-kashmiri-chilli-pepper-gravy\/07\/38\/3569\/59\/appdev2098\/healthy-indian-recipes\/curries\/","title":{"rendered":"MUTTON\/LAMB IN A KASHMIRI CHILLI PEPPER GRAVY"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>\u2022 2 lbs mutton\/meat (washed and cubed)<\/li>\n\n\n\n<li>\u2022 2tbsp Ghee + 2 tbsp oil<\/li>\n\n\n\n<li>\u2022 4-5 Shallots (finely sliced)<\/li>\n\n\n\n<li>\u2022 2 tsp ginger garlic paste<\/li>\n\n\n\n<li>\u2022 2 tbsp Kashmiri red chilli powder<\/li>\n\n\n\n<li>\u2022 1- 1.5 tsp fennel powder<\/li>\n\n\n\n<li>\u2022 1\/2 tsp dry ginger powder<\/li>\n\n\n\n<li>\u2022 1\/2 cup yogurt (whisked well)<\/li>\n\n\n\n<li>\u2022 1.25 cups water<\/li>\n\n\n\n<li>\u2022 pinch of saffron (optional)<\/li>\n\n\n\n<li>\u2022 salt &#8211; to taste<\/li>\n\n\n\n<li>\u2022 A handful of chopped coriander leaves, for garnish<\/li>\n<\/ol>\n\n\n\n<p>\u2022 GARAM MASALA<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>\u2022 1&#8243; Cinnamon stick<\/li>\n\n\n\n<li>\u2022 3 cloves<\/li>\n\n\n\n<li>\u2022 3-4 green cardamom<\/li>\n\n\n\n<li>\u2022 1 Tsp Cumin Seeds<\/li>\n\n\n\n<li>\u2022 1-2 Black Cardamoms<\/li>\n\n\n\n<li>\u2022 1 bay leaf<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>&#8211; Powder the whole spices\/ garam masala (Cinnamon, cloves, green cardamom &amp; Cumin Seeds) together excluding the black cardamom and bay leaf &amp; set aside.<\/li>\n\n\n\n<li>&#8211; In another small bowl, add the Kashmiri Chilli powder, fennel seed powder and ginger powder with 1\/4 cup of water and mix together.<\/li>\n\n\n\n<li>&#8211; In a heavy bottom pot, heat the ghee &amp; oil on medium high then add the black cardamom &amp; bay leaf to the oil.<\/li>\n\n\n\n<li>&#8211; Then add the sliced shallots and fry them on medium-low heat until they start caramelizing and turning golden brown. (This takes a good 8-10 minutes so be patient, but don&#8217;t turn up the heat)<\/li>\n\n\n\n<li>&#8211; Add the ginger garlic paste and fry for a minute or two.<\/li>\n\n\n\n<li>&#8211; Then add in the mutton (goat meat)\/ lamb cubes and turn up the heat browning the meat well.<\/li>\n\n\n\n<li>&#8211; Once the meat is browned on all sides, add the Kashmiri chilli spices we mixed with water and fry it for 2-3 mins.<\/li>\n\n\n\n<li>-Stir in the whisked yogurt, a pinch of saffron (optional)and salt to taste. Cover and let the curry simmer on medium for 15 mins until the oil starts separating from the curry.<\/li>\n\n\n\n<li>&#8211; Once you see the oil start separating, add half of the powdered garam masala (whole spices) and add a cup of water to loosen the curry.<\/li>\n\n\n\n<li>&#8211; You can now transfer the curry to a pressure cooker(aka Instant pot) and cook on high for 8-10 mins then natural release the pressure. Or you can lower the heat, cover the pot and allow the curry to simmer for 45mins-60 mins until the meat gets tender.<\/li>\n\n\n\n<li>&#8211; Check to see if the meat is tender (if you&#8217;re cooking bone-in the meat should be falling off the bone) &amp; season with salt if needed.
