Approx, 270 grams We will be using one half for the pudina paste and the other half while sauteing.<\/li>\n\n\n\n<li>2\u00a0green chilies\u00a0or to taste<\/li>\n\n\n\n<li>2.25\u00a0tsps\u00a0salt\u00a0or to taste<\/li>\n\n\n\n<li>2\u00a0tsps\u00a0oil<\/li>\n\n\n\n<li>1\u00a0tsp\u00a0mustard seeds<\/li>\n\n\n\n<li>2\u00a0tsps\u00a0cumin seeds<\/li>\n\n\n\n<li>\u215b\u00a0tsp\u00a0asafoetida\u00a0skip for a gluten-free version<\/li>\n\n\n\n<li>5\u00a0curry leaves<\/li>\n\n\n\n<li>1\u00a0cup\u00a0raw rice\u00a0I used sona masoori rice. But you can use basmati as well<\/li>\n\n\n\n<li>2.5\u00a0cups\u00a0water\u00a0divided. 2 cups to cook the rice and \u00bd cup for preparing the pudina paste<\/li>\n\n\n\n<li>2\u00a0boiled potatoes\u00a0peeled and mashed (optional)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Cook the rice &#8211;<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cook the rice in your preferred way. I cooked the rice in a pressure cooker by adding 2 cups of water. Spread the rice on a plate and let it cool completely. You can use leftover rice also. If I plan to pack this for lunch, I usually make the rice the night before so it will be more comfortable in the morning.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Prepare the pudina paste-<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Grind the two green chilies, half of the onion, and mint leaves by adding 3 to 4 tbsps of water. Rinse the mixer jar with remaining water and set it aside.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Make the pudina rice-<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat the kadai and add oil.<\/li>\n\n\n\n<li>When the oil is hot, add mustard seeds, jeera, and asafoetida.<\/li>\n\n\n\n<li>When the mustard seeds splutter, add the onion and curry leaves. Saute until the onions are soft.<\/li>\n\n\n\n<li>When the onions are soft, add the mint paste and the water used to rinse the mixer jar.<\/li>\n\n\n\n<li>Add the salt and mix well.<\/li>\n\n\n\n<li>Cook well until all the water gets absorbed, and mint leaves paste thicken like below. We need to cook until the raw smell completely goes off.<\/li>\n\n\n\n<li>Reduce the heat to low and add the cooked and cooled down rice and mix gently but thoroughly.&nbsp;<\/li>\n\n\n\n<li>If using potatoes, mash them and add them to the rice.
