{"id":3679,"date":"2023-09-14T05:05:32","date_gmt":"2023-09-14T05:05:32","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=3679"},"modified":"2023-09-14T05:05:33","modified_gmt":"2023-09-14T05:05:33","slug":"malai-kofta","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/14\/malai-kofta\/05\/05\/3679\/32\/appdev2098\/day-indian-recipes\/dinner\/","title":{"rendered":"MALAI KOFTA"},"content":{"rendered":"\n<h4 class=\"wp-block-heading\">FOR THE KOFTAS<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>350 grams&nbsp;potatoes (boiled, peeled and mashed)<\/li>\n\n\n\n<li>150 grams&nbsp;paneer (crumbled)<\/li>\n\n\n\n<li>4 tbsp&nbsp;rice flour<\/li>\n\n\n\n<li>2 tbsp&nbsp;corn flour<\/li>\n\n\n\n<li>salt<\/li>\n\n\n\n<li>chilli powder<\/li>\n\n\n\n<li>2 tbsp&nbsp;toasted cashews<\/li>\n\n\n\n<li>1 tbsp&nbsp;raisins<\/li>\n\n\n\n<li>oil (for deep frying)<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">FOR THE GRAVY (CURRY)<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>450 grams&nbsp;tomatoes (cut&nbsp;1&nbsp;by 8)<\/li>\n\n\n\n<li>250 grams&nbsp;onions (chopped)<\/li>\n\n\n\n<li>5 tbsp&nbsp;oil (divided (3 tbsp&nbsp;and&nbsp;2 tbsp))<\/li>\n\n\n\n<li>1\/3 cup&nbsp;cashews<\/li>\n\n\n\n<li>1\/2 tsp&nbsp;cardamom powder<\/li>\n\n\n\n<li>1\/2 tsp&nbsp;toasted cumin powder (see recipe note 1)<\/li>\n\n\n\n<li>1 tsp&nbsp;chilli powder<\/li>\n\n\n\n<li>salt<\/li>\n\n\n\n<li>2 tbsp&nbsp;malai or fresh cream (for garnish)<\/li>\n\n\n\n<li>chopped coriander (for garnish)<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a large dish, add mashed potatoes, crumbled paneer, 1 tbsp corn flour, rice flour, salt, chilli powder. Mix well until a stiff dough is formed. Add more rice flour if needed.<\/li>\n\n\n\n<li>Prepare small balls and fill each with toasted cashews (chopped) and raisins. Seal and shape into koftas. Roll it through the remaining corn flour and place on a tray. Repeat with the remaining mixture and deep fry until golden brown.<\/li>\n\n\n\n<li>In a wok (kadhai) add 3 tbsp oil. Let heat on medium heat and add onions. Saut\u00e9 for 2-3 minutes until they are lightly cooked. Add cashews and cook until they are lightly toasted. Add tomatoes and cook for 5-6 minutes until they are fully cooked. Let this cool for 10 minutes and then transfer to a blender to puree the onion, tomato and cashew mixture. Keep aside.<\/li>\n\n\n\n<li>In the same kadhai, add remaining oil, cardamom powder, toasted cumin powder and chilli powder. Add the pureed onion tomato mix and cook for a couple of minutes. Add salt and mix well.<\/li>\n\n\n\n<li>Once cooked, transfer to a serving dish and add the fried koftas right before serving. Add malai\/ cream and chopped coriander.
