{"id":3700,"date":"2023-09-14T05:16:26","date_gmt":"2023-09-14T05:16:26","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=3700"},"modified":"2023-09-14T05:16:27","modified_gmt":"2023-09-14T05:16:27","slug":"dal-bukhara","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/14\/dal-bukhara\/05\/16\/3700\/26\/appdev2098\/day-indian-recipes\/dinner\/","title":{"rendered":"Dal Bukhara"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1.5\u00a0cups\u00a0whole black gram\u00a0or whole urad dal (black matpe, urad bean)<\/li>\n\n\n\n<li>250\u00a0grams\u00a0tomatoes\u00a0or 3 medium to large tomatoes<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0Ginger Garlic Paste\u00a0or 1 inch ginger + 4 to 5 medium garlic cloves- crushed finely in a mortar-pestle<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0Kashmiri red chili powder or deghi mirch\u00a0\u2013 if using a hotter variety then use \u00bd teaspoon<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0Garam Masala<\/li>\n\n\n\n<li>90 to 100\u00a0grams\u00a0white butter\u00a0or regular butter \u2013 about 6 to 7 tablespoons white butter<\/li>\n\n\n\n<li>7 to 8\u00a0tablespoon\u00a0light cream\u00a0or 25% to 30% fat or 3 to 4 tablespoons heavy whipping cream<\/li>\n\n\n\n<li>4.5 to 5\u00a0cups\u00a0water\u00a0for pressure cooking the lentils<\/li>\n\n\n\n<li>1 to 1.5\u00a0cup\u00a0water\u00a0\u2013 to be added later<\/li>\n\n\n\n<li>1\u00a0inch\u00a0ginger\u00a0\u2013 julienned for garnish, optional<\/li>\n\n\n\n<li>1\u00a0tablespoon\u00a0butter\u00a0or cream for garnishing, optional<\/li>\n\n\n\n<li>salt\u00a0as required<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions&nbsp;<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Preparation<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Soak the lentils in enough water overnight or for 7 to 8 hours.<\/li>\n\n\n\n<li>Drain them later and rinse a couple of times. Transfer the lentils to a 3 or 4 litre pressure cooker.<\/li>\n\n\n\n<li>Add 4.5 to 5 cups water and pressure cook the lentils for 16 to 18 whistles or about 18 to 20 minutes on medium heat.<\/li>\n\n\n\n<li>When the lentils are getting cooked, make a fine, smooth puree of the tomatoes in a blender and crush the ginger and garlic to a paste in mortar-pestle.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Making Dal Bukhara<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>When the pressure settles down on its own, open the lid of the pressure cooker.<\/li>\n\n\n\n<li>Then add the ginger-garlic paste, tomato puree, Kashmiri red chili powder, butter, cream and salt. Also add 1 to 1.5 cups of water.<\/li>\n\n\n\n<li>Stir very well and keep the pressure cooker on low heat, without its lid on. Let the dal simmer for about 1 hour or 1 hour 30 minutes.<\/li>\n\n\n\n<li>Keep stirring often, so that the lentils don&#8217;t stick at the bottom of the cooker. Also mash some of the lentils while stirring.<\/li>\n\n\n\n<li>If the dal becomes thick, then add some hot water. Once done, check the taste and add more red chili powder or salt if required.<\/li>\n\n\n\n<li>Lastly sprinkle garam masala powder and stir well.<\/li>\n\n\n\n<li>While serving Dal Bukhara, dot with butter or cream.
