{"id":3735,"date":"2023-09-14T05:49:43","date_gmt":"2023-09-14T05:49:43","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=3735"},"modified":"2023-09-14T05:49:44","modified_gmt":"2023-09-14T05:49:44","slug":"ragi-dosa","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/14\/ragi-dosa\/05\/49\/3735\/43\/appdev2098\/day-indian-recipes\/1-breakfast-recipes\/","title":{"rendered":"Ragi Dosa"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS&nbsp;&nbsp;<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">For The Dosa Batter:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bd&nbsp;cup&nbsp;urad dal<\/li>\n\n\n\n<li>1&nbsp;cup&nbsp;ragi or finger millet flour<\/li>\n\n\n\n<li>\u00bd&nbsp;tsp&nbsp;fenugreek seeds<\/li>\n\n\n\n<li>1&nbsp;tsp&nbsp;salt<\/li>\n\n\n\n<li>some oil or ghee<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the Potato Onion Masala:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3-4&nbsp;large&nbsp;potatoes, peeled and cut into small cubes<\/li>\n\n\n\n<li>1&nbsp;large&nbsp;onion, cut into small cubes<\/li>\n\n\n\n<li>1&nbsp;tbsp&nbsp;oil<\/li>\n\n\n\n<li>1&nbsp;sprig&nbsp;curry leaves<\/li>\n\n\n\n<li>1&nbsp;tsp&nbsp;urad dal<\/li>\n\n\n\n<li>1-2&nbsp;green chillis, finely chopped<\/li>\n\n\n\n<li>1&nbsp;tsp&nbsp;ginger paste<\/li>\n\n\n\n<li>\u215b&nbsp;tsp&nbsp;asafetida (hing)&nbsp;optional<\/li>\n\n\n\n<li>\u00be&nbsp;tsp&nbsp;salt<\/li>\n\n\n\n<li>\u00bc&nbsp;tsp&nbsp;fenugreek seeds<\/li>\n\n\n\n<li>1&nbsp;tsp&nbsp;mustard seeds<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS&nbsp;<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Preparation of Ragi Dosa Batter:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Soak urad dal and fenugreek seeds in enough water for at least 4-6 hours.<\/li>\n\n\n\n<li>In a mixing bowl or tin, add ragi flour and \u00be cup water.<\/li>\n\n\n\n<li>Mix it into a slurry. Mix well so that there are no flour lumps.<\/li>\n\n\n\n<li>Drain out the water from the urad dal using a sieve. Wash the dal under running water.<\/li>\n\n\n\n<li>Grind urad dal into a smooth consistency using a food processor. Use about \u00be cup water or less.<\/li>\n\n\n\n<li>Remove the ground urad dal from the food processor and add it to the ragi flour slurry.<\/li>\n\n\n\n<li>Add salt and mix well. Make sure that the ragi and urad dal mixture are mixed well.<\/li>\n\n\n\n<li>Cover and place the bowl or tin and place in a warm place to allow the batter to ferment for 8-10 hours.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Preparation of the Potato Onion Masala:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat oil in a wide pan over medium heat.<\/li>\n\n\n\n<li>Add fenugreek seeds and urad dal. Allow them to sizzle for a few seconds.<\/li>\n\n\n\n<li>Add mustard seeds.<\/li>\n\n\n\n<li>As soon as the mustard seeds begin to pop, add the curry leaves and asafetida if using any.<\/li>\n\n\n\n<li>Add chopped chillis and ginger. Stir fry for a 15 seconds.<\/li>\n\n\n\n<li>Add turmeric powder and onion.<\/li>\n\n\n\n<li>Stir fry till the onion is a bit soft.<\/li>\n\n\n\n<li>Add potatoes, salt and red chilli powder. Mix well.<\/li>\n\n\n\n<li>Cover the pan, lower the heat.<\/li>\n\n\n\n<li>Cook till the potatoes are done.<\/li>\n\n\n\n<li>Add chopped coriander and leave the masala on the side till required.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Preparation of Dosa:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Before you prepare the dosa make sure the chutney and sambhar too are ready. Check above for the recipe link.<\/li>\n\n\n\n<li>The batter should be fermented. Add about \u00be &#8211; 1 cup water to it and mix well. The batter should be of pouring consistency and not too thin or thick.<\/li>\n\n\n\n<li>Heat the dosa tawa or pan over medium heat.<\/li>\n\n\n\n<li>Dip a kitchen towel or cloth lightly in the oil. Rub the dosa pan with it.<\/li>\n\n\n\n<li>Take about \u2153 cup of the batter, pour it in the middle of the pan. Using a small steel bowl or ladle, immediately spread out the batter in a swift circular motion outwards into a thin crepe or pancake. The dosa should be at least 6-8 inches or more in diameter.<\/li>\n\n\n\n<li>Drizzle about \u00bd -1 tsp oil or ghee around the edges of the dosa.<\/li>\n\n\n\n<li>Allow it to cook till the top of the dosa appears dry and the edges of the dosa will start to curl up.<\/li>\n\n\n\n<li>Allow the dosa to cook till it begins to turn a bit brown for crispy dosa. For soft dosa remove it as soon as the edges begins to curl.<\/li>\n\n\n\n<li>Use a spatula to remove the dosa.<\/li>\n\n\n\n<li>Some like their masala on the side, and some on the dosa.<\/li>\n\n\n\n<li>If you want to prepare the latter way then add about \u00bd cup of the masala to half part of the dosa.
