{"id":3767,"date":"2023-09-14T06:10:37","date_gmt":"2023-09-14T06:10:37","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=3767"},"modified":"2023-09-14T06:10:38","modified_gmt":"2023-09-14T06:10:38","slug":"pumpkin-soup-with-garam-masala","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/14\/pumpkin-soup-with-garam-masala\/06\/10\/3767\/37\/appdev2098\/day-indian-recipes\/4-soups-recipes\/","title":{"rendered":"Pumpkin Soup with Garam Masala"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3\u00a0cups\u00a0pumpkin puree\u00a0(2 1\/2 lb pie pumpkin or sugar pumpkin or 2 14-ounce cans organic\u00a0pumpkin puree)\u00a0<strong>you\u2019ll need 3 cups total<\/strong><\/li>\n\n\n\n<li>2 tablespoons\u00a0olive oil\u00a0(or\u00a0coconut oil)<\/li>\n\n\n\n<li>1&nbsp;large leek, sliced, rinsed (or sub&nbsp;one&nbsp;onion, diced)<\/li>\n\n\n\n<li>6&nbsp;garlic cloves, rough chopped<\/li>\n\n\n\n<li>1 tablespoon&nbsp;fresh ginger, sliced<\/li>\n\n\n\n<li>2\u00a0cups\u00a0veggie broth\u00a0( or use water with 1 teaspoon veggie Boullion paste)<\/li>\n\n\n\n<li>2 teaspoons\u00a0garam masala\u00a0spice<\/li>\n\n\n\n<li>1\/2 teaspoon\u00a0salt<\/li>\n\n\n\n<li>1\/3\u20131\/2\u00a0cup\u00a0coconut milk, more to taste<\/li>\n\n\n\n<li>juice of&nbsp;one&nbsp;large orange (see notes for subbing)<\/li>\n\n\n\n<li>2 tablespoons\u00a0maple syrup<\/li>\n\n\n\n<li>cracked pepper and\u00a0Aleppo\u00a0chili flakes (or pinch\u00a0cayenne)<\/li>\n\n\n\n<li>optional: cilantro<\/li>\n<\/ul>\n\n\n\n<p>Finishing oil (optional garnish)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3 tablespoons\u00a0coconut oil\u00a0or\u00a0ghee<\/li>\n\n\n\n<li>1\/4\u00a0cup\u00a0pumpkin seeds<\/li>\n\n\n\n<li>1 teaspoon\u00a0fennel seeds<\/li>\n\n\n\n<li>1 teaspoon\u00a0black mustard seeds<\/li>\n\n\n\n<li>1 teaspoon\u00a0cumin seeds<\/li>\n\n\n\n<li>a few\u00a0curry leaves\u00a0(optional)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 425F (if using fresh pumpkin)<\/li>\n\n\n\n<li>Cut pumpkin in half, scoop out seeds, and place open side down on a greased parchment-lined sheet pan. Bake for 30 minutes, or until easily pierced with a knife (through the skin). Lift off the skins.<\/li>\n\n\n\n<li>Heat oil in a\u00a0Dutch oven\u00a0or\u00a0medium pot\u00a0over medium heat. Cut and rinse the leeks ( make\u00a0leek oil\u00a0with the tops if you want!). Add. the leeks to the pot along with the garlic and ginger. Stir a few times and cover, stirring occasionally until the leeks are tender, and garlic is fragrant, about 7 minutes. Add the\u00a0veggie broth, cover and bring to a simmer.<\/li>\n\n\n\n<li>Stir in the pumpkin (3 cups of the roasted pumpkin, or two cans of\u00a0pumpkin puree).<\/li>\n\n\n\n<li>Add the\u00a0salt\u00a0and\u00a0garam masala. Blend the soup until really thick, creamy smooth and return to the pot (or use an\u00a0immersion blender).<\/li>\n\n\n\n<li>Stir in\u00a0coconut milk, orange juice and\u00a0maple syrup. Add a few cracks of pepper, and a pinch of chili flakes or\u00a0cayenne. Taste, adjusting it to your taste. Feel free to add more\u00a0garam masala.<\/li>\n\n\n\n<li>To make the Tempering Oil: heat the\u00a0coconut oil\u00a0or\u00a0ghee\u00a0in a skillet over medium-high heat. Stir in the\u00a0pumpkin seeds, stir for 1-2 minutes. Add the seeds, and optional\u00a0curry leaves, stirring constantly until you hear a little popping. Remove from the heat.<\/li>\n\n\n\n<li>To serve, divide soup among bowls. Drizzle with a spoonful of\u00a0coconut milk. Spoon the flavorful tempering oil over top.
