{"id":3802,"date":"2023-09-15T03:54:39","date_gmt":"2023-09-15T03:54:39","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=3802"},"modified":"2023-09-15T03:54:40","modified_gmt":"2023-09-15T03:54:40","slug":"bengali-aloo-dum-alur-dom","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/15\/bengali-aloo-dum-alur-dom\/03\/54\/3802\/39\/appdev2098\/flavorful-recipes\/flavorful\/","title":{"rendered":"Bengali Aloo Dum (Alur Dom)"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0pound\u00a0baby potatoes\u00a0(500\u00a0g)<\/li>\n\n\n\n<li>4\u00a0tablespoons\u00a0mustard oil\u00a0(or any other cooking oil)<\/li>\n\n\n\n<li>\u00bc\u00a0teaspoon\u00a0asafetida (hing)<\/li>\n\n\n\n<li>4-5\u00a0green chilies\u00a0(slit into half)<\/li>\n\n\n\n<li>2\u00a0whole bay leaves (tajpatta)<\/li>\n\n\n\n<li>2-3\u00a0cloves (laung)<\/li>\n\n\n\n<li>4-5\u00a0whole black peppercorns (kalimirch)<\/li>\n\n\n\n<li>\u00bd\u00a0cup\u00a0chopped onions<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0ginger garlic paste<\/li>\n\n\n\n<li>1\u00a0cup\u00a0finely chopped tomatoes<\/li>\n\n\n\n<li>\u00bd\u00a0cup\u00a0whisked plain yogurt (dahi, curd)<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0coriander powder<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0turmeric powder<\/li>\n\n\n\n<li>2\u00a0teaspoons\u00a0Kashmiri red chilli powder<\/li>\n\n\n\n<li>\u00bd\u00a0teaspoon\u00a0cumin powder<\/li>\n\n\n\n<li>\u00bc\u00a0teaspoon\u00a0garam masala powder<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0salt\u00a0(or to taste)<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0sugar<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0chopped cilantro (fresh coriander leaves)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Cook The Potatoes<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Wash the potatoes well with water.&nbsp;<\/li>\n\n\n\n<li>Heat&nbsp;4-5&nbsp;cups of water in a large pot over high heat.&nbsp;<\/li>\n\n\n\n<li>Once the water comes to a boil, add the potatoes along with&nbsp;2&nbsp;teaspoon salt to the pan.<\/li>\n\n\n\n<li>Cover and cook until they are softened&nbsp;(fork tender).<\/li>\n\n\n\n<li>Drain the water and peel the skin of the boiled potatoes.&nbsp;<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Fry The Potatoes<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat mustard oil in a pan over high heat.<\/li>\n\n\n\n<li>Once the oil is hot, add the peeled potatoes to the pan and fry until they turn brown from all sides, stirring frequently.<\/li>\n\n\n\n<li>Remove the fried potatoes to&nbsp;a plate and keep them aside.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Make The Curry<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Reduce the heat to medium.<\/li>\n\n\n\n<li>Add asafetida and green chilies to the same oil and let them crackle for 4-5 seconds.<\/li>\n\n\n\n<li>Add bay leaves, cloves,&nbsp;and black peppercorns,&nbsp;and let them crackle for 4-5 seconds.<\/li>\n\n\n\n<li>Now add onions and fry until they turn light brown in color, stirring frequently.<\/li>\n\n\n\n<li>Add ginger-garlic paste and fry until onions are nicely browned.&nbsp;Stir frequently.<\/li>\n\n\n\n<li>Add tomatoes to the pan and cook for a minute.<\/li>\n\n\n\n<li>Add yogurt and cook for another minute, stirring continuously otherwise the yogurt might curdle.<\/li>\n\n\n\n<li>Now add coriander powder, turmeric powder, chili powder, cumin powder, garam masala powder, salt, and sugar, and fry until the oil starts to separate from the sides.<\/li>\n\n\n\n<li>Add little water if the masala is getting too dry.&nbsp;<\/li>\n\n\n\n<li>Add the fried potatoes and&nbsp;1&nbsp;cup of water to the pan and mix well.
