Yellow Lentil (Moong Dhuli)<\/li>\n\n\n\n<li>2 Large Boiled Potato \u2013 Chopped into 6 pieces<\/li>\n\n\n\n<li>1\/2 Cauliflower Head &#8211; roughly chopped<\/li>\n\n\n\n<li>1 Cup Green Peas &#8211; frozen or fresh<\/li>\n\n\n\n<li>1 Tbsp Ginger Paste<\/li>\n\n\n\n<li>2 Tbsp Vegetable Oil \u2013 You may use any flavorless oil<\/li>\n\n\n\n<li>4 Tbsp Ghee<\/li>\n\n\n\n<li>1\/2 Cup Water<\/li>\n\n\n\n<li>3 Cups of Water (For soaking rice+lentils)<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Whole Spices:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Large Bay Leaf (Tej Patta)<\/li>\n\n\n\n<li>2 Dry Red Chili<\/li>\n\n\n\n<li>2 Black Cardamom (Badi Elaichi)<\/li>\n\n\n\n<li>2 Cloves (Laung)<\/li>\n\n\n\n<li>1 Stick of Cinnamon (Dalchini)<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Powdered Spices:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Tsp Garam Masala<\/li>\n\n\n\n<li>\u00bd Tsp Turmeric<\/li>\n\n\n\n<li>1 Tsp Red Chili Powder<\/li>\n\n\n\n<li>2 Tsp Salt (As per your taste)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Roast the Lentil and Rice:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat a large pot.<\/li>\n\n\n\n<li>Add moong dal and roast it over medium-low flames for 2 minutes.\u00a0(this brings out the nutty lentil aromas and the dal will turn slightly brown-pink).<\/li>\n\n\n\n<li>Remove the roasted dal and add rice to the same pot.<\/li>\n\n\n\n<li>Roast the rice for 2 minutes and transfer to the roasted dal bowl.<\/li>\n\n\n\n<li>Soak the roasted dal and rice mix in 2 cups water.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Roast the Veggies:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In the same pan, add 1tsp vegetable oil\u00a0(you can add ghee too)\u00a0and roast the cauliflower until light brown\u00a0(takes 2 minutes).<\/li>\n\n\n\n<li>Remove and keep aside.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Make the Bengali Khichuri (Bhoger Khichuri):<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat the same pot and add remaining vegetable oil + 1tbsp ghee.<\/li>\n\n\n\n<li>Add the whole spices and saute for 30 seconds.<\/li>\n\n\n\n<li>Add the powdered spices and saute for 30 seconds.<\/li>\n\n\n\n<li>Now add the soaked roasted dal + rice\u00a0(keep the water and just add the grains).<\/li>\n\n\n\n<li>Saute this mix 1-2 times and let this cook on low heat for 2 minutes.<\/li>\n\n\n\n<li>Now add water, green peas (you may use the soaking water if you kept it), and saute everything.<\/li>\n\n\n\n<li>Let this cook on low-medium heat for 2 minutes (stir every minute).<\/li>\n\n\n\n<li>Finally add cauliflower, potatoes, ghee, and mix everything.<\/li>\n\n\n\n<li>Add 1\/2 cup water, mix everything, and cover the pot.<\/li>\n\n\n\n<li>Let this cook for 10 minutes over low-medium heat (stir every minute and check for doneness of rice+dal).<\/li>\n\n\n\n<li>Once the khichuri is cooked, add some ghee on top and lightly mix in.<\/li>\n\n\n\n<li>Transfer to a serving bowl and
