{"id":3922,"date":"2023-09-15T05:04:43","date_gmt":"2023-09-15T05:04:43","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=3922"},"modified":"2023-09-15T05:04:44","modified_gmt":"2023-09-15T05:04:44","slug":"easy-shami-kebab","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/15\/easy-shami-kebab\/05\/04\/3922\/43\/appdev2098\/flavorful-recipes\/appetizer\/","title":{"rendered":"EASY SHAMI KEBAB"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Whole Spices<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1&nbsp;tbsp&nbsp;coriander seeds<\/li>\n\n\n\n<li>2&nbsp;tsp&nbsp;whole black peppercorns<\/li>\n\n\n\n<li>2&nbsp;inch&nbsp;piece cinnamon stick,&nbsp;<em>broken into a couple pieces<\/em><\/li>\n\n\n\n<li>1&nbsp;small black cardamom<\/li>\n\n\n\n<li>2\u00a0green cardamom pods,\u00a0seeds removed and pod discarded<\/li>\n\n\n\n<li>8&nbsp;whole cloves<\/li>\n\n\n\n<li>1&nbsp;tsp&nbsp;toasted or regular cumin seeds<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">To Cook<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1.5\u00a0lb\u00a0(680\u00a0g)\u00a0ground beef,\u00a0(preferably full-fat)<\/li>\n\n\n\n<li>1\u00a0cup\u00a0(195\u00a0g)\u00a0chana dal (yellow split peas),\u00a0washed and soaked for at least 1 hour (up to overnight), then drained<\/li>\n\n\n\n<li>3\/4&nbsp;cup&nbsp;water for Instant Pot or 4 1\/2 cups water for stovetop<\/li>\n\n\n\n<li>1\u00a0(~210-270\u00a0g)\u00a0medium to large onion,\u00a0roughly chopped<\/li>\n\n\n\n<li>8-10\u00a0garlic cloves,\u00a0leave whole \u2013 will be crushed later<\/li>\n\n\n\n<li>1 1\/2\u00a0inch\u00a0(1 1\/2 tbsp)\u00a0piece ginger,\u00a0minced or crushed<\/li>\n\n\n\n<li>1&nbsp;medium bay leaf<\/li>\n\n\n\n<li>1\/2-1&nbsp;Tbsp&nbsp;red chili flakes<\/li>\n\n\n\n<li>1&nbsp;tsp&nbsp;cumin seeds<\/li>\n\n\n\n<li>2-3\u00a0tsp\u00a0kosher salt \u2013 See note 3,\u00a0will need less if using regular table salt or sea salt<\/li>\n\n\n\n<li>1\/2\u00a0tsp\u00a0chaat masala,\u00a0optional<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">To Chop<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0(~80\u00a0g)\u00a0small onion,\u00a0coarsely chopped<\/li>\n\n\n\n<li>1\u00a0thai or Serrano green chili pepper,\u00a0thinly sliced<\/li>\n\n\n\n<li>1\/2-1\/3&nbsp;cup&nbsp;cilantro leaves<\/li>\n\n\n\n<li>2&nbsp;tbsp&nbsp;mint leaves<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For mixing<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0egg,\u00a0whisked<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For pan-frying or baking<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00a0neutral oil,\u00a0as needed<\/li>\n\n\n\n<li>1-2\u00a0eggs,\u00a0whisked<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS&nbsp;<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Add all of the ingredients listed under \u2018Whole Spices\u2019 to a spice grinder and grind until a powder is formed. You may also crush them in a mortar and pestle, though this will be more tedious. This will come to around 2 \u00bd tbsp ground spices. Set aside.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Instant Pot Instructions<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In the Instant Pot, add all of the ingredients listed under \u2018To Cook\u2019 as well as the freshly ground spices. Mix very well to combine. (No need to more water than indicated even though it looks dry.)<\/li>\n\n\n\n<li>Secure the lid and set the Pressure Release to Sealing. Select the Pressure Cook setting and set the cook time for 20 minutes at high pressure.<\/li>\n\n\n\n<li>Let the pressure release naturally for 5 minutes, and then move the Pressure Release to Venting to release any remaining steam. Open the pot and select the Saut\u00e9 \u2013 High setting.<\/li>\n\n\n\n<li>Saut\u00e9, stirring often, for 20 minutes, or until all the moisture has evaporated and the mixture starts sticking to the bottom. (See Note 1) Press Cancel to turn off the Instant pot and allow to cool. If you have the time, refrigerate overnight and they&#8217;ll be even easier to shape. Remove the bay leaf.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Stovetop Instructions<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a medium, lightweight Dutch oven or pot, add all of the ingredients listed under &#8216;To Cook&#8217; along with the freshly ground spices and 4 1\/2 cups of water. Mix well to combine. Cover to bring to a boil over high heat. Use a slotted spoon to skim off any scum that rises to the surface.&nbsp;<\/li>\n\n\n\n<li>Place the lid ajar and continue to cook on high heat for 50 minutes to 1 hour (depending on thickness of your pot), stirring occasionally, until the chana dal (yellow split peas) is completely cooked. During the last 15-20 minutes, stir frequently to completely evaporate any moisture. The mixture will start sticking to the bottom of the pan. (See Note 1) Turn off the heat and allow to cool. If you have the time, refrigerate overnight and they&#8217;ll be even easier to shape. Remove the bay leaf.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">After Cooking<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Combine the onion, green chili pepper, cilantro, and mint in the bowl of a food processor. Use the pulse setting to finely chop (but not blend) this mixture. Transfer to a large bowl.<\/li>\n\n\n\n<li>Add the cooled beef and lentil mixture to the food processor. In batches, process this mixture until as smooth as possible (~1 min). Transfer this mixture to the bowl with the chopped onion mixture. Mix well, then taste and add salt, if desired. Add the whisked egg and mix to combine.<\/li>\n\n\n\n<li>Using oiled hands, shape \u00bc cup heaped of the mixture into a flat, round patty about 2 3\/4 inches in diameter. Continue with the rest of the mixture. You will have around 20 patties. If you wish to freeze them, do so at this point. (See Note 2)<\/li>\n\n\n\n<li>Place the egg in a shallow bowl so that you can dip the kababs as you cook. Heat a large skillet, frying pan, or cast iron pan over medium-high heat. Add enough oil to coat the bottom of the pan.<\/li>\n\n\n\n<li>Dip both sides of each patty into the egg wash. Place 3-5 patties in the pan and allow them to cook for 3-4 minutes on each side, using a spatula to turn them over. Be careful not to crowd them too much or it will be harder to turn them. Reduce heat as necessary.<\/li>\n\n\n\n<li>Remove from the pan, and place on a plate lined with a paper towel to absorb any extra oil. Repeat until you have finished pan-frying all the patties.
