Stir briefly to combine.<\/li>\n\n\n\n<li>Cover and set vent to \u201csealing\u201d.&nbsp; Cook on manual (high pressure) for 30 minutes.&nbsp; Let the Instant Pot rest for&nbsp;an extra 10 minutes (natural release).&nbsp; Then carefully turn the vent to \u201cventing\u201d and&nbsp;release the remaining pressure (quick release).&nbsp; Remove lid.<\/li>\n\n\n\n<li>Transfer the cooked chicken to a separate plate, and shred into bite-sized pieces with two forks.<\/li>\n\n\n\n<li>Add the shredded chicken and coconut milk to the soup, and stir gently until combined.&nbsp; set aside.<\/li>\n\n\n\n<li>Heat (an extra) 1 tablespoon oil in a\u00a0large stockpot\u00a0over medium-high heat.\u00a0 Add onion and saut\u00e9 for 5 minutes, stirring occasionally, until soft and translucent.\u00a0 Stir\u00a0in the garlic and ginger and cook for an additional 1-2 minutes, stirring occasionally, until fragrant.<\/li>\n\n\n\n<li>Add in the chicken, mushrooms, bell peppers, carrots, stock, wild rice and Thai chili paste.&nbsp;
