{"id":4538,"date":"2023-09-24T14:03:32","date_gmt":"2023-09-24T14:03:32","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=4538"},"modified":"2023-09-24T14:03:32","modified_gmt":"2023-09-24T14:03:32","slug":"easy-vegetable-red-curry","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/24\/easy-vegetable-red-curry\/14\/03\/4538\/32\/appdev2098\/thai-food-recipes\/vegetarian\/","title":{"rendered":"EASY VEGETABLE RED CURRY"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1&nbsp;small onion, diced (2 cups,&nbsp;225 g)<\/li>\n\n\n\n<li>4&nbsp;cloves garlic, minced<\/li>\n\n\n\n<li>3 tablespoons\u00a0Thai\u00a0red curry paste<\/li>\n\n\n\n<li>1&nbsp;400 ml can coconut milk (light or full-fat)<\/li>\n\n\n\n<li>1 tbsp&nbsp;fresh ginger, minced<\/li>\n\n\n\n<li>1&nbsp;large or 2 small red peppers, sliced (3 cups,&nbsp;290 g)<\/li>\n\n\n\n<li>1&nbsp;medium zucchini, sliced (2 cups,&nbsp;225 g)<\/li>\n\n\n\n<li>3&nbsp;carrots, peeled and sliced into rounds (2 heaping cups,&nbsp;350 g)<\/li>\n\n\n\n<li>2&nbsp;heaping cups broccoli florets<\/li>\n\n\n\n<li>1 tbsp&nbsp;organic sugar or coconut sugar<\/li>\n\n\n\n<li>2 tbsp&nbsp;soy sauce, gluten-free tamari or coconut aminos<\/li>\n\n\n\n<li>2 tbsp\u00a0fresh lime juice<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a sauce pan, saut\u00e9 the garlic and onion in 2 tbsp of water or vegetable stock. If you prefer, you can cook in 2 tsp of\u00a0olive oil,\u00a0avocado oil\u00a0or\u00a0coconut oil.<\/li>\n\n\n\n<li>Add the curry paste, stir to combine and cook for 3 minutes.<\/li>\n\n\n\n<li>Add the coconut milk and chopped carrots and simmer lightly over medium heat for 4 minutes.<\/li>\n\n\n\n<li>Add the rest of the vegetables and stir to combine. Continue simmering for about 10 minutes until all the veggies are tender.<\/li>\n\n\n\n<li>Stir in the soy sauce, sugar and lime.<\/li>\n\n\n\n<li>Serve with rice or another whole grain of choice.
