{"id":4556,"date":"2023-09-24T14:11:46","date_gmt":"2023-09-24T14:11:46","guid":{"rendered":"https:\/\/saad.appscodestudio.com\/?p=4556"},"modified":"2023-09-24T14:11:47","modified_gmt":"2023-09-24T14:11:47","slug":"vegan-thai-chopped-salad","status":"publish","type":"post","link":"https:\/\/saad.appscodestudio.com\/index.php\/2023\/09\/24\/vegan-thai-chopped-salad\/14\/11\/4556\/46\/appdev2098\/thai-food-recipes\/vegetarian\/","title":{"rendered":"VEGAN THAI CHOPPED SALAD"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">INGREDIENTS<\/h3>\n\n\n\n<p><strong>For the Salad<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup\u00a0cooked\u00a0brown rice\u00a0(add up to\u00a02 cups\u00a0if desired)<\/li>\n\n\n\n<li>4 cups&nbsp;shredded purple or green cabbage<\/li>\n\n\n\n<li>2&nbsp;carrots, grated (approx.&nbsp;1.5 cups)<\/li>\n\n\n\n<li>1&nbsp;red bell pepper, diced<\/li>\n\n\n\n<li>6&nbsp;green onions, finely chopped<\/li>\n\n\n\n<li>1 cup&nbsp;lightly packed, finely chopped cilantro<\/li>\n\n\n\n<li>1\/2&nbsp;a cucumber, diced (approx.&nbsp;1 cup)<\/li>\n\n\n\n<li>1\/2&nbsp;a medium red onion, diced (approx.&nbsp;1 cup)<\/li>\n<\/ul>\n\n\n\n<p>For the Baked Tofu<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1&nbsp;package firm or extra firm tofu<\/li>\n\n\n\n<li>2 tbsp&nbsp;soy sauce or gluten-free tamari<\/li>\n\n\n\n<li>1 tsp\u00a0garlic powder<\/li>\n\n\n\n<li>1 tsp&nbsp;black pepper<\/li>\n<\/ul>\n\n\n\n<p>For the Spicy Peanut\u00a0Sauce<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>5 tbsp\u00a0(75 g) natural\u00a0peanut butter\u00a0<\/li>\n\n\n\n<li>1 tbsp&nbsp;(15 g) sriracha sauce<\/li>\n\n\n\n<li>4&nbsp;cloves garlic, grated or minced<\/li>\n\n\n\n<li>2 tbsp&nbsp;(30&nbsp;mL) soy sauce or gluten-free tamari<\/li>\n\n\n\n<li>1 tbsp&nbsp;(15&nbsp;mL) fresh lime juice<\/li>\n\n\n\n<li>1 tbsp&nbsp;(15&nbsp;mL) rice wine vinegar<\/li>\n\n\n\n<li>3 tbsp&nbsp;water, plus more to consistency<\/li>\n\n\n\n<li>1 tbsp\u00a0(15 g)\u00a0pure maple syrup<\/li>\n\n\n\n<li>salt and pepper,\u00a0to taste<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">INSTRUCTIONS<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Press Tofu:<\/strong>&nbsp;Use a tofu press or fold a dishcloth over the block of tofu and place something heavy on top of it for at least 15 minutes. This step is not required but it helps to press out extra water so it can absorb more flavor and produce a crispier result.<\/li>\n\n\n\n<li><strong>Cook Brown Rice:<\/strong>&nbsp;If you don\u2019t have brown rice prepared, start cooking that now as it will need about 45 minutes to cook. For quicker option, you can use white rice or quinoa.<\/li>\n\n\n\n<li><strong>Preheat the oven to 400 F.<\/strong><\/li>\n\n\n\n<li><strong>Bake Tofu:<\/strong>\u00a0Chop the tofu into triangles, slabs or cubes then toss with the tofu ingredients. Place on a\u00a0baking tray\u00a0lined with parchment paper (optional but easier clean up!) and bake for 30 minutes until starting to brown and crisp. I like to flip it after 20 minutes but its\u2019 not totally necessary to do so. For extra crispiness, see notes on pressing the tofu first.<\/li>\n\n\n\n<li><strong>Make Dressing:<\/strong>\u00a0To make the dressing, add all the dressing ingredients to a\u00a0blender\u00a0or food processor, or use and immersion\u00a0blender\u00a0and mix until smooth and creamy. If you don\u2019t have a blending method, sub the garlic with 2 tsp\u00a0garlic powder\u00a0and whisk everything together until smooth and creamy. You may need a little water to adjust the consistency of the sauce. If so, add water 1 tbsp at a time until you have a thick but pourable sauce.<\/li>\n\n\n\n<li><strong>Prepare Vegetables:<\/strong>&nbsp;Chop all the veggies and either divide between 4 containers or bowls and top each with equal amounts of rice, tofu and&nbsp;peanut sauce or mix everything together in a large bowl and serve mixed.
